Table Beer

Table Beer is returning as our next seasonal offering (previously known as Epicurious). The balance for this beer is struck between a mild bitterness from the hops as well as slight notes of pear and even a touch of citrus that come from the combination of Lemondrop, Styrian Golding, and French Strisselspalt hops. The yeast used is a Belgian strain that we ferment at a slightly cooler temperature and lager to provide softer notes of clove and fruit character. The malt bill has pilsner malt, as well as some spelt that is traditional to this style of beer, and flaked oats that support a soft mouthfeel. Table Beer is designed with the chef in mind, and we worked with different chefs throughout the creation of this beer to try and create the ideal complement to food, and a welcome addition to a night with friends.

Crafting great beer is all about balance. At one end of the scale, if you’re brewing a delicate Western European lager, you have to ensure that the four ingredients work in harmony. These more delicate styles take incredible skill to brew well as there’s nowhere to hide any miscalculations or mistakes throughout production. Launching to the almost extreme opposite, the realm of IIPAs, balance, surprisingly, is still a defining factor. Instead of delicacy in balance, it’s now big flavour in balance. Simplistically, to achieve a big flavourful IIPA you need: Big Malt + Big Hops + Big Fermentation. It’s a bit of complicated symbiosis between these three requirements and each of these three provide multiple elements. The malt provides the complex spectrum of sugars for fermentation as well as the main structure and body of the beer. The hops contribute bitterness to balance the malt sweetness as well as resinous piney flavours and juicy fruity-citrusy aromas. The fermentation provides us with a big hit of fun juice (ethanol) and the vast array of incredibly important characterful aroma and flavour compounds. Not sure if that was too far off track, anyway, what you needed to take away from that was: Pirate Life IIPA is a big beer with big delicious fresh flavours that we hope you will enjoy by sticking it in your big mouth. Keller Marzen

Our brewers traveled overseas to brew a limited release beer, Keller Märzen, with our friends at Spaten which pays tribute to time-honored brewing tradition. This classic German lager was a Goose Island recipe brewed in the month of March, just as all German Märzen beers have been for centuries. We then lagered this amber-hued beer for several months in the Spatenbrau cellar at near-freezing temperatures-considerably longer than just about any contemporary beer. The result is a smooth, malty, andunfiltered amber lager with light, bready sweetness and a delicate German hop character.
