The malty goodness provided by Simpson's Double Roasted Caramel malt makes you think you've gone to the highlands

Grapes have been used occasionally in beer since almost the very beginning, so we thought: why wait for an occasion? This dry, crisp Blegian-style ale is tinged with the luscious scent of Niagara grapes, one of the varieties bred from the wild Vitis labrusca grapes native to North America. Their sunny aromatic character punches right through the malt, while a bit of hibiscus adds a blush in color and a hint of crisp tannin on the finish.

Brace yourself for a refreshingly tart snap. Tartastic's lacto sour profile and fruity, spicy undertones enliven the taste buds with each bright, sessionable sip.

This wet hopped IPA is a testament to what happens when fresh Simcoe meets fresh Amarillo on the Hops Seeking Hops section of Craigslist.

Brewed with generous late hop addition, creating aromas of citrus and tropical fruit. The palate is balanced and dry with subtle bitterness to complete this refreshing ale.

This American Amber Ale is hopped primarily with Amarillo. Dewey features biscuit malt that delivers a slight toasted flavor. The crystal malt used gives Dewey Hill a striking amber color.

Brewed in appreciation of The Publick House, a craft beer mecca in Brookline, MA where close friends and warm hospitality welcome us time after time. The Publick House IPA features Citra, Centennial, and Columbus hops with an aroma bursting with fresh orange juice and under-ripe peach along with notes of toasted malt. The flavor profile is more bitter than our “Street” IPAs, but with a toasted, bready malt character to balance. Bitter grapefruit flavors emerge with mild pine on the finish.

Double Double Toil and Trouble! Our third fruited “shakes beer” is out, and holy ghost it is awesome! We blended in 30 gallons of fresh blackberries, raspberries, and blueberries.

Imperial Chocolate Milk Stout

Brewed in March to make party in October. This Marzen (beer of March) matured through the summer and aged to perfection in six months, just in time to debut at the Octoberfestiversary. Meant to be perfect for all, even the color of the beer compliments the changing leaves. Crisp and delightful.

These more delicate styles take incredible skill to brew well as there’s nowhere to hide any miscalculations or mistakes throughout production. Launching to the almost extreme opposite, the realm of IIPAs, balance, surprisingly, is still a defining factor. Instead of delicacy in balance, it’s now big flavour in balance. Simplistically, to achieve a big flavourful IIPA you need: Big Malt + Big Hops + Big Fermentation. It’s a bit of complicated symbiosis between these three requirements and each of these three provide multiple elements. The malt provides the complex spectrum of sugars for fermentation as well as the main structure and body of the beer. The hops contribute bitterness to balance the malt sweetness as well as resinous piney flavours and juicy fruity-citrusy aromas. The fermentation provides us with a big hit of fun juice (ethanol) and the vast array of incredibly important characterful aroma and flavour compounds. Not sure if that was too far off track, anyway, what you needed to take away from that was: Pirate Life IIPA is a big beer with big delicious fresh flavours that we hope you will enjoy by sticking it in your big mouth. Our brewers traveled overseas to brew a limited release beer, Keller Märzen, with our friends at Spaten which pays tribute to time-honored brewing tradition. This classic German lager was a Goose Island recipe brewed in the month of March, just as all German Märzen beers have been for centuries. We then lagered this amber-hued beer for several months in the Spatenbrau cellar at near-freezing temperatures-considerably longer than just about any contemporary beer. The result is a smooth, malty, andunfiltered amber lager with light, bready sweetness and a delicate German hop character.
