Wineification

The “wineification” of beer has been a constant topic of discussion these days, so why not just take a step further and blend the two? We took our Black Tuesday Imperial Stout and fermented it along with late harvest Syrah grapes from the vineyards of Los Olivos, from our good friends at both Fess Parker and Saarloos & Sons. We then aged this wine/beer hybrid in French Oak barrels, waiting for the perfect time to bottle it up. The flavor profile is remarkable. Notes of black cherry, vanilla, cinnamon, oak, aged balsamic, port wine and a sherry-like oxidation from the barrels. This beer is like nothing that you have ever tried before.

Working Mom

The Winter Woman imperial brown ale was aged in Woodford Reserve bourbon barrels and Appleton Estate rum barrels – and since we had the name “Working Mom” (thanks Kasey!) already chosen, we felt it appropriate to age the brew in the wood for nine months. It is wonderfully complex: Notes of the bourbon, and to a lesser extent the rum, come through, married with chocolate, toffee, fruit, and vanilla from the wood. These flavors follow along to the palate, and additionally you will get some lingering hop bitterness and the alcohol warmth that you would expect from a beer this big. 69 IBU

Wrath Of Pecant!

Wrath of Pecant is a collaboration between Dogfish and the Alstrom Brothers of Beer Advocate celebrating the 2010 Extreme Beer Fest. We worked with them to come up with the concept for the beer. If you want to read the actual 'making of the beer' conversation - check it out here! Once we had the beer idea, we let Beer Advocate members vote to name it - the winning name came from BA member 'strangefate.' So in the end... Wrath of Pecant became a 6% abv brownish ale brewed with pecan-wood smoked malt, plantains, and carob. It is complex yet quaffable; maltiness nuttiness and subtle earthy notes prevail. The beer was first tapped at the 2010 Extreme Beer Fest in Boston in February. The bottles (750ml) were released from the Milton brewery for The Weekend Of Compelling Ales & Whatnot in March of 2010. They are now available for sale from the brewery (and very soon at the brewpub!) and should be around into the summer. There are no plans to distribute this beer outside the state of Delaware. Our friends at Cigar City find inspiration in the Cuban roots of their hometown, and that Latin-inspired flair is evident in Yonder Bock. This tropical take on the Maibock adds a Latin island flair to this traditional German style beer. Enamored with the Latin roots of their Tampa home, Cigar City always tries to channel a bit of local history into their beers, e.g. the Humidor Series whose beers age on Spanish cedar as an homage to Tampa’s cigar making roots. Only five years old, this brewery deserves the fast praise that’s come its way.
