Texas Pils

Texas Pils is unlike any Pilsner you've ever tasted. While this lager is based on traditional recipes, several modifications make this beer exceptional. The grist is over 90% Hanka variety Pilsner malt from Bohemia: an heirloom barley variety related to the oldest cultivated barleys in Eastern Europe. This barley has a rich, smooth taste that stands up to the noticeable hop character of this beer. To live up to its big name, we've made it slightly higher in ABV too (6%). To match the increase in gravity, we've also added more hops, and not the usual suspects. A new hop variety from Germany named Polaris lends a unique character to the beer reminiscent of spicy mint and alpine herbs. Traditionally brewed Pilsners have a medium body, and ours stays true to this, providing ample body to support the increased hop character and bitterness. Perfect for relaxing on the patio or even for cooler Fall weather, this versatile lager broadens the horizon for traditionally brewed Pilsner lager.

The Big Smoke

Now what is this? A smoked beer?? It really isn't as crazy as it sounds. 250 years ago virtually all beers were smoked (it's true, Google it!), but with the dawning of the industrial revolution most of the smoke lifted. However, in the German town of Bamberg the flame has quite literally been kept alive and to this day the town’s brewers produce world renowned beers brewed with their own special rauchmalz (beechwood smoked malt). We’ve taken our best porter recipe and added a good measure of that same Bamberg Rauchmalz. The smoke mingles beautifully with the rich, dark roasted chocolate flavours of the porter without being overpowering. Although it pairs extremely well with smoked seafood, barbeques, strong cheeses and hearty stews, its food friendliness isn’t limited to savouries; chocolate and caramel based deserts are great companions too! Trust us; it really isn't as crazy as it sounds.

The Catalyst

In 1850, A German Immigrant named Antone Miller arrived by Steamboat in a booming little Gold Rush town built at the confluence of the American and Sacramento Rivers. Here he set out to build the Union Brewery - which would quickly grow to be one of the largest, most prolific breweries in the Region. Sadly, ten years later a fire claimed the brewery beyond repair. Lucky for us his famous Steam-beer recipe didn't burn up with it! On a history binge at the city archives one afternoon, we stumbled upon this historic recipe and set out to brew it once again.
