Smoked Chilli Gose - Steam Funk Project

Smoke upfront with a tart, citrusy and herbaceous finish. And on top of that a slight tingling and warming chilli heat. We wanted to create something complex yet balanced and picked flavors that work beautifully together in food. So why wouldn't they work just as well in the beer. This Gose is brewed to resemble a traditional Gose brewed with salt and coriander seed. But with more complexity from two types of smoked malt and chilies added to the brew. Great to drink on its own but works very well as a food matching beer.

A Raspberry & Mango Walked Into A Bar

So a raspberry and a mango walked into a bar...and right into our soured ale. The base features barley, wheat, and a bit of lactose soured with lactobacillus buchneri. Before kegging, we added perfect balance of mango and raspberry puree that pairs very well with the tartness of the beer. There is plenty of raspberry and mango on the nose and those persist in the flavor too. So walk yourself into our bar for an explosion of fruited sour flavor.

Bees for my Honey

One great thing about the craft beer world is how erratic it can be. To be completely honest, until just recently we had never even heard of Hermit Thrush Brewery – simply pronouncing their name proved a major challenge for most of us! But one day – out of the blue – we received an email from Joan Bulzacchelli and Victoria Banerjee from the brewing crew at Hermit Thrush, asking if they could join in on a brewing day at Amager since they were travelling Europe – half in private, half to visit breweries. As we only have the deepest respect for Vermont breweries we suggested turning the brewing day into an actual collaboration day, and a recipe was developed via email with one of the brewery’s masterminds Christophe Gagne. Bees For My Honey is a tribute to a product that is local to both breweries, a wonderful product that we both hold in high regard: honey! And it’s also a tribute to those wonderful buzzing little aviators called the honey bees. A friendly lil creature we have been taking for granted for way too long, only to realize that they seem to be abandoning us in recent years. We can’t blame them, but when honey becomes a scarce product, it may be too late to invite them back, because they just may have found a safer haven without pesticides and pollution. Save the bees – we need ‘em!!

There and Back Again

There And Back Again is a tale of a spontaneous fermentation, isolation, confiscation, rejuvenation, mutation, and finally perturbation. This sour American Wild Ale, is a collaborative effort with our dear friend Dr. Jason Rodriguez. We took our house “honey badger” mixed culture (no saccharomyces) and allowed it ferment over several months before dry hopping it with a touch of citra and galaxy. It pours a hazy golden yellow releasing bright notes of pink grapefruit, lemon, pineapple, and passion fruit. It tastes sour and juicy with similar notes as the smell. This small batch was split and the other half is currently refermenting on apricots and peaches.

Fun IPA with progressive brewing techniques Juxtaposition can be a fun little thing when it comes to beer. This is a prefect example of that, with more traditional C hops being used in conjecture with some fun new techniques we have picked up along the way. Combine that with Hornindal Kveik yeast, a fun little Norwegian yeast strain that's just a couple centuries old almost went extinct and has seen a recent rise in popularity. It's easy to see why all these ingredients have been popular at one time or another, this guy is flavorful and juicy, has almost no bitterness, and my personal favorite has plenty of well-disguised alcohol! You'll be drunk before you know it, seeing ghosts of your Norwegian ancestors looking on with pride. Maybe our parents weren't wrong when they said they don't make em like they used to, so cry out jubel and drink promiscuously friends!
