A mix of hops from 30 local growers dominates this fresh hop ale. The malty foundation includes pale, Munich, carapils and a little dark crystal. The hops were mostly Cascade but we also received Centennial, Nugget, Williamette, Chinook, Cluster, Newport and some mystery hops. These hops were added to the boil as wet hops… over 40 pounds of them. Then we dry hopped with more Cascade and Centennial hops. The result is a taste that is power packed with citrus, grapefruit and puckering tartness. Too hoppy??? Don’t blame us. You grew the hops.

Dirk is a Dunkelweizen — think dark Hefeweizen — returning to our draft-only lineup after a successful debut in 2017. Named for vertically-challenged German professional basketball legend Dirk Nowitzki, this brew is a limited, seasonal release.

Named and brewed with the help of random internet people, Summit Helles Ya, You Betcha! is a crisp and refreshing unfiltered pale lager brewed with barley and wheat malts, experimental hops, and a touch of fresh blood orange. Sessionable but big in flavor, this beer is a Helles-Style Lager with flavor notes of bread crust, sourdough and graham cracker, plus supporting aromas of orange peel, peach and apricot. Dry-hopped with German hop variety Mandarina Bavaria, Summit Helles Ya, You Betcha!

Old School German Spring Beer made with honey. An almost extinct German beer style, the Kottbusser originated in the town of Cottbus which was located on a major trade route between Poland and Germany. When Germany united, the Reinheitsgebot (German Beer Purity Law) was put into effect and outlawed many local styles of beer.

Our flagship, best selling ale marries a biscuity malt backbone with zingy, bitter hops in perfect beery harmony. We describe this one as a transatlantic IPA; taking the best from both British and American takes on the style.

8BiT has aggressive aromas and caramel malt flavours. The big bitterness delivered with a high hop flavour is balanced by a sweet malt character. This IPA presents citrus and floral aromas on the nose and is a refresher all year round. Brewed to balance a heavy British malt base of Pilsner, Rye and CaraAroma against bright U.S Cascade hops. 8BiT has high hop flavours and aromas created by using four different hop addition techniques - kettle, whirlpool, hop-back and dry hop. This IPA is the beer to serve with crispy skin dishes such as chicken or pork. Throw in some spices and caramelised onions for the perfect combination. If you like your curries, this will also compliment Thai, Indian or Malay dishes.

An homage to Beaujolais Nouveau, a French red wine style that emphasizes the freshness of the fruit. Tasting Notes: A rosé-style cider fermented on Petit Verdot and Merlot grape skins from King Family Vineyards, then aged in French oak barrels. This cider/wine hybrid combines our favorites aspects of cider-making and winemaking into a truly unique beverage. The grapes bring beautiful color, complex tannins and a light fruitiness to the dry, crisp cider. The oak aging allows the separate components to meld together harmoniously, allowing the different elements to perfectly compliment one another. Flavors of juicy strawberry, with a slight oak bite, and a crisp acidic finish. There's a perception of sweetness from the stickier mouthfeel of the grapes and oak tannins. A truly unique but accessible cider. Cider-making Techniques: Grape skin tannins and pigments break down and recombine with the apple juice during fermentation, building structure and body in the cider. The cider then mellows and further integrates in French oak barrels.

This Belgian Golden Strong Ale is deceivingly easy-drinking, hence the devilish name. Very pale in color with a nice subtle fruit and spice character from the Belgian yeast, this is a brew almost anyone can enjoy.

St. Giles pours dark brown with an off-white head. The nose is a combination of traditional Scottish malt and American Cascade hops.The taste is full-bodied, ruch and smooth with coffee and chocolate flavours. Brewed with the intention of adding a slight twist to the Scotch Ale style and named after one of Edinburgh most famous landmarks, St.Giles Cathedral.

New England style IPA with Mosiac, Simcoe, and Galaxy.

You and I is our second milkshake IPA and displays the other side of the spectrum of fruit: blackberries, blueberries, and raspberries. With a light addition of milk sugar and Madagascar vanilla beans, this beer is double dry-hopped with Enigma and Rakau for a super mellow hop flavor.

In 1842, Josef Groll, the “Father of Pils”, energized the beer world by making the first pilsner. By bringing the flavor of a good German Pilsner and adding a little Eight Bridges twist, our intent is to do the same thing. Our Bavarian styled pilsner starts with all German ingredients to which we add a bit of noble hop for a little spiciness. The wonderfully malty aroma, that is classic to this style, is balanced with a noble hop character. The beer is crystal clear, straw colored with a brilliant white head. Its flavor is crisp and clean like good pilsners should be.

Dry hopped Citra, mosaic, Idaho 7, and lemondrop.

Pressed golden orange apricots dominate this uniquely tart cider that still remains highly drinkable. The Apricots add a subtle flavor that is like combining a peach and a plum but not as sweet. The Romans and Greeks had it right when they used apricots as a main ingredient of their drink known as the "Nectar of the Gods". The driest of our ciders leaves a lasting round finish that calls for more. May the Gods be appeased. Ingredients: Hard Cider, Apricot Juice. Contains Sulfites.
