Long before “hops” were the norm for “spicing” beers, brewers used a wide variety of botanicals for enhancing the flavor of their stew pot concoctions. The botanicals or herbs we used in this beer cannot be more “local” due to the fact that we grow 2 out of 3 of them! We grow and spice this Belgian Pale Ale with our own Bee Balm, Lemon Balm and locally source Jasmine Green Tea. The beer has absolutely no hops and the herbs compliment the spicy Belgian yeast on their own. The result is a refreshingly subdued citrus and pepper flavor that melds nicely with this style of beer.

The beer makes use of custom malts by Stone Path Malt, and uses Nelson Sauvin and Hallertau Blanc hops. The brew itself involved a double decoction mash procedure, a traditional German technique that involves the repeated cooking of the wort.
