The ‘Bink blond’ was the first who came out of the barrels. It’s a beer of high fermentation, unfiltered and not pasteurized, with secondary fermentation in the bottle. This beer with a hoppy character is the perfect thirst-quencher. The ingredients are: two types of malt, two Belgian types of hop, brewing liquor and yeast. Our ‘Bink blond’ is a fresh and lightly digestible beer with a hoppy flavor and a bitter aftertaste.

Feine Hofmark Bio Weisse, hefetrüb und bernsteinfarben, zeigt sich mit einem luftigen stabilen Schaum im Glas. From “munich” barley, this unpasteurized ale beer, naturally refermented in the bottle, shows a very fine-grain, rich and creamy foam and good perlage. Its hallmarks are a pronounced aroma of hops in bloom and malt and fruity notes, with the fragrances of yeast, vanilla, warm bread crust and honey.

“Oh, so juicy!,” not something a lot of IPAs can say, but when you rock Belgian-style with an IPA, that’s exactly what you get. The natural fruit aromas paired with tropical and citrus hop aromas keep the “flavor train” rolling longer than a stick of gum. Perfect for any event requiring “brewery casual” attire.

This Ancient Ale proves that beside the wine on every Italian's dinner table, there should also be a place for beer. To develop the recipe for Birra Etrusca Bronze, Dogfish Head's Sam Calagione traveled to Rome with molecular archaeologist Dr. Pat McGovern. With the help of Birreria Brother Brewers Leo DeVencenzo of Birra del Borgo and Teo Musso of Baladin, they analyzed drinking vessels found in 2,800-year-old Etruscan tombs. Although Italian historians were a little reluctant to admit it, the team clearly found that the Etruscans had a taste for ale. "In every part of the process, we go for as much authenticity as we can," Calagione says. "Ingredients are often tough to track down, and there can be financial and logistical challenges, but we really love embracing these risks to bring these beers to market." The backbone of Birra Etrusca comes from two-row malted barley and an heirloom Italian wheat. Specialty ingredients include hazelnut flour, pomegranates, Italian chestnut honey, Delaware wildflower honey and clover honey. A handful of whole-flower hops are added, but the bulk of the bitterness comes from gentian root and the sarsaparilla-like Ethiopian myrrh resin. Birra del Borgo and Baladin also will brew a version of Birra Etrusca, and to add complexity and variety, each brewery will ferment its batches with different traditional materials. Dogfish will use bronze, Baladin will use wood, and Birra del Borgo will use terra cotta.

Birthday Brew #1- Brewed to commemorate our first birthday in 2011. Birthday Brew #1 is a double IPA with a solid malt backbone from maris otter. American Pale & Hadley wheat malts. Piney citrus aroma. Full mouth feel with smooth hop bitterness. Amarillo & Glacier hop extracts combined with 8 different hops. After taste of juicy hop bitterness, light tropical citrus zest.

This beer came to me as an inspiration one night while I was driving home one night thinking about our upcoming birthday celebration, the need for a novella release in front of it, and the spare ingredients we had sitting in the brewery - namely leftover lemongrass. It's not the type of beer that I usually make, but altogether I'm very happy that it came out to taste, well, just like lemon sponge cake with sugary sweet frosting. It's very Funfetti. The choice of ingredients here are really to support the whole idea: lactose as an unfermentable sugar to lend sweetness, Tahoma hops because they have a lemony hop character, and Acidulated Malt to give that light extra tang to make the Lemongrass more complex and a little less Pledge-y. The vanilla was dosed to taste at 100ml and then scaled up to the whole batch.

Batch #1 of this hoppy IPA was tapped on our Brewmaster’s 28th birthday and since then it’s been a hit. A variety of hops all compliment each other in this birthday ale. Chinook for it's citrus and pine notes and Citra for its fresh tropical fruit smell and taste. Have a couple of these and enjoy your birthday suit... Preferably when you get home.

This smooth, full bodied tawny Brown Ale is rich and complex, with a slightly toasty, roasty, nutty flavor and a clean finish.
