The Big 4 is a nickname given to the founding members of the Central Pacific Railroad. Comprised of an engineer, a banker, a politician and a financier, the brilliance of this group of men was in how they were able to work together to leverage their individual strengths to become a collectively formidable team. As a result, the Big 4 used its power and influence to not only complete and manage the railroad but dominate California finance and politics throughout the late 1800s. Big Konas is the 4th installment in our Killing Craft Series. This beer was brewed with some of the finest ingredients in the world including cacao nibs from Equador and Ghana, Pacari Piura Nube chocolate bars (winner of the 2013 international chocolate awards) and Indonesian civet coffee. Civet coffee or “kopi luwak” is one of the rarest and most exquisite coffees in the world. The Asian Palm Civet, a small mammal, eats wild coffee berries and poops out the seeds. The seeds are then collected, washed (thoroughly we hope), roasted, and sold at top dollar. The digestion process of the Asian Palm Civet makes for the smoothest coffee in the world. Also, we used wild harvested civet coffee, as opposed to caged civet coffee.

Our fall seasonal, BigLeaf Maple Autumn Red™, was inspired by a native California tree, its incredible leaves, its delicious syrup, and the best colors of fall. Bigleaf maple thrives along the banks of California’s mountain streams. Native Californians once made rope and baskets from its bark. Today, artisans handcraft its wood and burl into custom guitars. In autumn its huge leaves, up to a foot across, can display a full range of color as they slowly turn from green to gold to red. Bigleaf maple sugaring in California dates to the 1800s; yet this tree’s unusually flavorful syrup remains the product of a small group of hobbyists. A hint of maple—including bigleaf maple—syrup in every brew perfectly complements the malty complexity, balanced hoppiness, and rich fall hue of BigLeaf Maple Autumn Red™, a red ale like no other. BigLeaf Maple Autumn Red™ is a quaffable, well-balanced American red ale with character. Its malty complexity and coppery color come from a combination of two caramel malts, pale malt, and a hint of maple syrup. To complement these flavors, we used three additions of Nelson Sauvin hops in the brewkettle and a unique blend of Nelson Sauvin, Citra, and Cascade for dry hopping. The result is a distinctive fall seasonal beer with extraordinary depth and intriguing aroma.

We have been thinking about brewing a big blonde American-style Imperial Pale Ale ever since we made our Curious Parrot last summer in Ottawa and now’s the time to do it! We brew strong specialty beers in Ottawa in the winter (it’s cold there!) and Imperial Pale Ales are an old 19th Century style that fits in with our old 19th Century building there! The liberal use of US grown Cascade hops gives the beer a very big “grapefruit” aroma and palate and bringing the beer out in the last week of February when “Grapefruit League” Major League Baseball is starting meant that the name was almost pre-determined! No grapefruits were harmed in the making of this beer! It’s a lovely rich beer blond beer with a beautiful white head and long lingering hop finish.
