Black Ale

Black Ale isn't really a style of beer, but rather a subjective name given to many beers when they really don't fit inside the realm of other dark beers like Porter and Stout. Our Black ale was developed with a particular hop in mind - Sorachi Ace - and was brewed for Schlafly's Fresh Hop Festival this year. We used a lot of dark roasted malts to balance the intensity of the Sorachi Hops and played to the hops strength as a first addition bittering hop. The end result is a rich, slightly creamy ale that has notes of citrus underneath layers of roasted aromas.

Black Beauty

Black Beauty is a big Belgian Dubbel - but brewed with rye. It is velvety smooth, chocolatey, has undertones of toffee and rum, and finishes with a dry, spiciness from the rye. The yeast comes directly from an old Trappist monastery in Belgium and imparts a wonderfully complex character to the beer. I made Chef Dave make me our own traditional dark Belgian candi sugar to add to the complexity. This beer was inspired by the music of Miles Davis. I actually placed speakers right by the fermentation tank and "serenaded" the yeast with Miles' music while it fermented the beer. Outta sight, man!

Black Betty is an Imperial Raspberry Vanilla Porter. This chocolate centered porter is fermented with 42 Lbs of natural raspberry puree bringing this brew to an intoxicating 9%abv. So it’s a contradiction in terms. A Black India Pale Ale?! The concept we came up with revolved around the old chewy sweets ‘Black Jacks & Fruit Salads’. We wanted to take a big, fat IPA and lace it with under- tones of slight roast and aniseed and blend with the huge tropical aromas of Pacific West coast hops. We gained the hint of roast by using Carafa malts from Germany. They give us the dark colour and a touch of roast but minimal bitterness, thus letting the hops fly and fly!

Black Betty Schwartzbier

This almost black lager originates from Germany and is most closely associated with Porter. The difference being the long maturation period (or lagering time) required to produce a true Schwartzbier. The flavor is reminiscent of treacle, coffee and toasted malt. It is not and should not be perceived as burnt or ashy like some stouts. Black Betty has 5% alc/vol and a smooth character that marks most lager beers. The name, of course, comes from the Huddy Ledbetter song from the 1940�s which was made popular by the band Ram Jam and later by the Black Crows and U2, among others.
