Bourbon Barrel Aged Three Philosophers

Three Philosophers is a unique blend of a Belgian-style dark ale and Liefmans Kriek, an authentic cherry ale from Belgium. Cherry chestnut in color, it's opaque but not cloudy with full carbonation topped by a smooth, tan head. Flavors and aromas of roasted malt, molasses and brown sugar, dark fruits, brandied raisins and chocolate, Three Philosophers has notable sweetness with low hop bitterness. The mid-palate shows a soft malt center which gives way to a dry, warm, wine-like finish. The complexity of this beer make it a good candidate for ageing gracefully, as spicy sherry and port notes should intensify.

Our Tavern Porter, inspired by Washington’s, is dark, smooth, and complex with just a hint of dried fruit in the finish. Thick and black as motor oil, this style has a more pronounced hop presence than its cousin, the Russian Imperial Stout. Herbal hop notes lightly cut through aromas of luscious black currants, brown sugar, and rich, dark chocolate. Big and bold on the palate, the roasty, chewy flavors are nuanced with a slight fruitiness and just the right amount of bitterness, both from the roasted malt and the hops. Aged for a year in bourbon barrels in basement of Jackie O’s. A huge malt bill give this fall seasonal beer its unique canvas. Sixty pounds of hand picked pumpkin from Jackie O’s Farm are roasted in the pizza oven at our pub before the pumpkin flesh (no skin!) is added to the mash, melding with the already complex grist. American hop varieties provide a formidable bitterness and some great flavor and aroma. At the end of the boil, the wort is spiced with ginger, coriander, cinnamon, all spice, nutmeg, and more brown sugar.
