Black Maple was a beer we brewed on the fly. An open brew day was reason enough to go big and bold. We put out heads together and crafted an imperial porter with deep nutty notes, a touch of smoked malt, a melange of crystal malts, and a rich chocolate backbone. Locally harvested maple syrup from Sticky Pete's was added to the kettle. The whole batch was then placed into bourbon barrels where it rested for 11 months. This beer was consistently some of our favorite barrels to sample, we hope you enjoy!

Our Texas Star Bock aged for 4 to 6 months in Witherspoon Distillery Bourbon barrels.

Pours brown with very little head. The aroma is caramel malt, nutty, bourbon, vanilla and oak. The flavor is a wonderful blend of sweet caramel, fresh nuts, bourbon, vanilla, wood and light cherry notes.

Bourbon Barrel Buffalo Sweat is the second barrel-aged release from Tallgrass Brewing Co. We took our award-winning oatmeal cream stout and aged it in bourbon barrels to create a rich, complex, medium-bodied beer with a chocolate-espresso flavor and aroma, and warm bourbon undertones.

Bourbon Barrel Carrot Cake Imperial Amber Ale is made with hundreds of pounds of freshly grated carrots and aged in Kentucky Bourbon Barrels. Spice notes of cinnamon, all spice, cardamon, clove and vanilla compliment the fresh carrot flavor. Five specialty malts, fresh bourbon flavor, American grown hops and our house American Ale Yeast meld with the carrot cake flavor we all know and love.

Night fury imperial stout aged in Buffalo Trace bourbon barrels with direct trade cocoa nibs from our friends at Mindo Chocolate Makers and direct trade Black Cat Espresso beans from intelligentsia. This varient brings flavors of bitter-sweet dark chocolate, robust Italian coffee, thick fudge, molasses, hefty bourbon and oak. A truly unique beer and dessert all in one glass!

Deliciously light and fruity cider brewed in a bourbon barrel.

This hauntingly good brew in your hand is rife with dark complexities. Eleven malts were used to create deep flavors of coffee, chocolate, caramel, and molasses. A hint of bitterness and herbal character from carefully selected American hops help support the monolithic maltiness of Dark Apparition. After a month of conditioning in stainless steel, the beer was transferred into bourbon barrels. For 8 months, Dark Apparition waited patiently in oak barrels until the time was right to spring forth with its ghostly gusto. A truly decadent brew that is intended to be poured into your favorite snifter and given time to warm up from its dark and cold resting place. Be aware when in the presence of Dark Apparition ’cause this ghost is a creeper.

Dire Wolf aged in Watershed Bourbon barrels for 8 months.

Dark amber color. Full-bodied. Pronounced notes of caramel and oak with a smooth bourbony finish. Aged 10 months.

Aged for one month in a Garrison Brothers whiskey barrel.

Hypnopompa is our imperial stout brewed with almost 100 kilos of marshmallows and Tahitian vanilla beans (the size of cigars). Low carbonation and boiled a bit extra for good measure, this is a beer strictly for the stout inclined. Drink now or age for many years. Bourbon barrel aged edition comes with a gold cap. Cognac (Grönstedts) barrel aged edition comes with a green sticker.
