Citrus Ninja Exchange is the first of two collaboration beers brewed with The Charleston Beer Exchange. The first incarnation (released on draft only in September 2011) was a single-hopped Cascade double IPA brewed with approximately 50 lbs of fresh grapefruit, and then dry-hopped 4 times in the fermentor. The 2012 version has a simplified malt bill and uses a blend of American and New Zealand hop varieties.

City of the Dead is a big, full-bodied stout with lots of chocolate undernotes dominated by the bourbon barrel aged coffee. The beer is dosed at 1 pound per barrel, and has a distinctly rich, bourbon coffee aroma and flavor. As the beer warms, the bright bourbon aroma settles in and the coffee base really shines. This is the first commercially bottled barrel aged coffee beer in the world (that we know of!)

Named for our friend Sgt. Don McPherson of the Lake County Sheriff’s Office and a member of the Army National Guard that went overseas two times before retiring from the guard. This is a Scottish 80 schilling beer. Scotland used to tax the brewer by the amount of sugar they made in their wort, a beer of this strength was taxed at 80 schillings. Brewed with Simpson’s Golden Promise malt, a malt that is grown in Scotland, crystal 60 and roasted barley for some complexity. This is also a single hopped beer using US Golding.
