Our collaboration with Transmitter Brewing, Citrus Spectrum is a Saison brewed with lemon, lime, key lime, tangerines, red navels, ruby red grapefruit and mandarines, then dry hopped with loads of Hallertau Blanc hops.

When it comes to our beers and the ingredients we use, we give a wit. So rather than spinning just the same fruit wheel of the classic orange peel, we punched up our wit with the dynamic duo of tangerine and kaffir lime leaf. The fruit-forward aromatics and flavors are perfectly balanced, so you don’t have to bother adding a slice (or leaf) to the rim of your glass. Even with this lack of unnecessary garnish, you won’t find an absence of intense fruit. In fact, each dryly refreshing, citrusy sip of this coriander-spiced, tangerine-infused, Mandarina Bavaria-hopped creation will satisfy even the most hardcore fan.

Warm-fermented and then cold-conditioned, this refreshing golden ale is our interpretation of Kolsch, the great beer style of Cologne, Germany. Containing 100% German pilsner malt, it has a subtle, grainy, aroma and a delicate bitterness in the finish.

An amber-colored traditional Vienna Lager with a rich malt flavor balanced by German noble hops. Medium bodied and slightly sweet with a crisp yet smooth finish. Silver Medal, Great American Beer Festival 2011

City of the Dead is a big, full-bodied stout with lots of chocolate undernotes dominated by the bourbon barrel aged coffee. The beer is dosed at 1 pound per barrel, and has a distinctly rich, bourbon coffee aroma and flavor. As the beer warms, the bright bourbon aroma settles in and the coffee base really shines. This is the first commercially bottled barrel aged coffee beer in the world (that we know of!)

Built on the backbone of a classic English Barleywine with the addition of dried Prussian lemons, tart cherries, and cranberries. Dark fruit abounds with roasted goodness in each sip. Hints of melon and tropical notes on the nose. Long lingering finish that is rich yet not cloying that is reminiscent of fresh baked bread, bright citrus, and mellow pit fruit. Bold and complex at 12% with new layers emerging as your goblet warms.

A classic American IPA made with classic American ingredients. A blend of Columbus, Nugget and Galena provide a firm, bitter base that bears the full load of piney, grassy notes and deep hop flavors you expect from an IPA. The rocky, white head helps loft all those wonderful aromas right up to your snooter – so drink up!

A balanced & boldly aromatic imperial IPA; brewed with Warrior, Amarillo, Mosaic & Belma hops, then dry-hopped with even more Belma; clean, round & fruit forward with effusive notes of citrus in the nose (mandarin orange, meyer lemon, grapefruit & tangerine).

Named for our friend Sgt. Don McPherson of the Lake County Sheriff’s Office and a member of the Army National Guard that went overseas two times before retiring from the guard. This is a Scottish 80 schilling beer. Scotland used to tax the brewer by the amount of sugar they made in their wort, a beer of this strength was taxed at 80 schillings. Brewed with Simpson’s Golden Promise malt, a malt that is grown in Scotland, crystal 60 and roasted barley for some complexity. This is also a single hopped beer using US Golding.

Clara (1906-1969) was our grandfather’s sister; Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Grisette is crafted from American malted barley, Vermont Organic Wheat, European and American hops, our distinctive farmhouse yeast and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Clara.

Clare said "let's make a Scotch ale this fall." I said "great idea!" This big, malty ale is brewed with 7 different types of malt including Special B, Victory, dark crystal, and chocolate. Scotland is a historically poor growing region for hops, so many of their beer styles are malt forward and complex. Look for hints of cherry, raisin, toffee, and cocoa!

This beer starts with a wonderfully aromatic double IPA featuring Simcoe and Summit hops, and then we take it to the next level by adding grapefruit. The aroma is pure grapefruit rind, while the body and flavor remain true to a West Coast IPA, finishing bitter and dry.

This special "Grand Cru" edition of Clarice Belgian-style Dark Ale has been aged in a French Cognac oak foudre, culminating into a beautiful beer that warmly welcomes you with a deep amber color & cherry-like aroma. It then befriends you with its rich, fruity, velvety-sweet maltiness, full body & pleasant spiciness, bidding you farewell with flavors imparted by Cognac foudre-aging.
