Light on the hops, big on the flavor this blond ale is made with oats which lend to the beer’s smooth creaminess.

As an ale it has broad, sweet flavors. The lagering process contributes a dry quality that, while not as snappy as proper lagers, sets Kölsch apart from other ales. Its subtle flavors, moderate alcohol and traditionally small serving size makes this style a great session beer.

Clementine is our orange-infused American Wheat Ale. It's an off-shoot of our Good Time Wheat Ale, although Clementine strays a bit toward the "hefeweizen" side of the pond. She got her name from the tiny little oranges I zested when I was playing with this recipe on a very small scale. Now Clementine is all grown up and we hope you'll find her just as darling as when she was young.

A clean, crisp, and refreshing American Wheat beer sporting citrus notes from Ahtanum, Mosaic, and Simcoe hops, and finished with clementine juice in the secondary.

Hops are the hero in this powerhouse. Hopped throughout with Simcoe and Centennial, Clencher is loaded with pine and citrus aromas and the body and alcohol to compliment it’s assertive flavors.

Traditional British base malts to which lots of Melanoidin, Chocolate, and Special B specialty malts add character, we finish with Styrian Goldings hops and an English yeast strain. Imagine sitting in a nineteenth-century London pub – but without the foul stenches of the nineteenth century.

Beer made for Cleveland Beer Week Oct 14-22 2011 Hoppy German-Style Altbier

Named for Cleveland’s role in the pioneering of street lights, this beer will light you up nicely. This strong lager is brewed with 100% Munich malt and a decoction mashing technique to produce a rich, toasty malt flavor. Coupled with prolonged aging time, the result is a very smooth beer.

This IPA is a sharp counterpoint to the resin, dank citrus of Falcon Smash. It's an incredibly light bodied soft and dry American IPA with impressions of tropical citrus and dark berry floral aromas. Hopped generously with Citra and Mosaic hops

The first beer that Brass Castle ever brewed (originally named in honour of volunteer Coastguard Rescue Teams), it is a refreshing single-hop Cascade golden ale bursting with citrus and floral notes.

Clifford the Big Red Ale is a robust malty red ale with a generous dose of American hops. An assortment of rich British malts lend a beautiful red color and firm medium body to this beer along with caramel, biscuit and nutty flavors. Chinook, Cascade, Centennial and Falconer’s Flight hops add a pleasant bitterness, grapefruit citrus flavor, and piney aromas. A slightly stronger alcohol content at 6.6% abv helps balance the malt and hop flavors. Overall look for a pleasantly drinkable American Red Ale with a balanced hop and malt profile.

We've take our biggest ale and aged it for an entire year. It has a deep copper color and flavors that hint of dates and plums.
