Dampf Loc is an all-barley warm fermented ale brewed by the folks from Chicago’s Local Option; inspired by “Dampfbier” originally crafted by medieval peasant inhabitants of the Bavarian Forest. During the fermentation process generous amounts of foam and surface bubbles burst in the tank, giving the illusion that the ferment is boiling or “steaming.” Local Option took up the task of brewing Dampf Loc as a modern interpretation of its Teutonic predecessor, creating a “Hefe Gerste” ale that is true to its roots; unmistakable in character yet accessible to beer drinkers of all palates. Dampf Loc has a mild hop profile, medium body with pleasant effervescence and a clear, rich, orange hue. Dampf Loc is ideal for warm months, yet enjoyable year round.

An English pint shared with good friends was the inspiration for our cask conditioned Best Bitter. Dan flew in yeast from England and chose premium British Maris Otter Pale Malt to be balance the classic English Golding Hops from East Kent. You can expect to pour a lightly carbonated glass of rich amber ale, slightly cloudy and soft on the pallet with a pronounced dry hopped finish. Summer's end is fleeting here in Wisconsin so enjoy it while you may, before long both summer and our ale will be gone. So slow down, relax and savor the season.

Before Walter was known as Sweetness, he entereda dance contest on Soul Train andwon 2nd place. Brewed with honey, orange peel and coriander. Compare it to a Blue Moon.

If you dream of wheat this brew will get your toes tapping. Since 1995 we have brewed Bavarian style wheat beers exclusively for the same great state that grows and malts our own Wisconsin wheat. In a world full of posers this is a true hefe-weizen naturally 100% bottle fermented and hazy. Expect this beer to cascade effervescent into your glass. The rich spicy clove and cinnamon notes will greet your nose while sweet fruit and wheat kisses your lips. Lick the foam from your mouth and admit sometimes you just gotta get up and dance.

Dancing Trout Ale is a German Wheat Ale, the filtered version of a true Bavarian Hefeweizen. In Bavaria this beer would be called a Kristall-Weizen (Crystal-Wheat) because of its clarity. Dancing Trout Ale is brewed with malted wheat, pale and carmel malt, and moderately hopped using the best quality hops from Germany. Unlike its British and American counterparts, Dancing Trout Ale is brewed in the Bavarian tradition: aged a minimum of 28 days, versus 7-10 days for the average ale. This means Dancing Trout Ale is mild with no bitter aftertaste! We dedicate this beer to helping preserve Montana’s trout habitat, one beer at a time. To truly appreciate Dancing Trout Ale as a year-round member of Bayern Brewing’s line of fine beers, an explanation is in order. This is especially because it is possible that you may already know this beer by one or two different names. Back in 1987, this beer was known as Bayern Light Wheat Ale — the filtered version of our original Hefeweizen. In 2002, Light Wheat Ale took on the personality many beer connoisseurs came to know as Trout Slayer Ale. The beer and the name grew in popularity, especially with our outdoor and angling audience. Bayern Brewing celebrated its 20th anniversary in 2007, making it the oldest brewery operating in Montana. At that time, in order to honor our time-tested brew, we decided to change the name and the label image to best reflect Bayern Brewing's environmental company philosophy. In our search for a more appropriate name we kept coming back to Dancing Trout and Montana native artist Monte Dolack created yet another evocative image that was used for the label. Whether as a fishing term or in various spiritual expressions of music and dance, Dancing Trout has become a symbol celebrating the lifestyle embraced by Montana and the values of Bayern Brewing.

You might hate ‘em in your yard, but you’ll love ‘em in your beer! The spirit of homebrewing and craft beer come to life in FSB member-owner Tom Morgan’s, award-winning Dandelion Saison. In collaboration with FSB Brewmaster Darren Link, Tom’s Belgian style Saison will be brewed with (you guessed it) organic dandelion greens added throughout the boil. Dandelion Saison will be the inaugural of the first beer brewed by a winner of FSB’s first Member Homebrew Competition.

Packed with hop aroma, this IPA will smack your face with hoppiness. A mellow malt flavor sits quietly in the background and provides 6.6% ABV, yet the hops shine through. Citrus with a slightly peppery pine hop aroma. Unfiltered and unfined, cloudy and full-flavored. Malts: Pilsner, Pale, Cara-20 Hops: Bravo, Falconers Flight 7C, Citra, Equinox

American Wild Ale

A tart Berliner Weisse with a nice sourdough nose that has had boysenberries added during the secondary to give it a refreshing fruity flavor and a beautiful purple hue.

Just as Daniel was adventurous, this double is named after his pioneering spirit. It has a citrus hop bomb in the nose and a massive, resinous hop flavor. And despite the 9% ABV, this is one crushable double IPA.

I brew this beer to honor our departed brother Dan Wissman, who left us on 9/3/2011. He was an outstanding cyclist and skier, and blessed the lives of countless people in his short time on this planet. He was also a sartorial trendsetter so this beer matches his beered! YUK, YUK! Lots of malt character. and hopped to the top with a blend of English Fuggles, Goldings, and Target.

This is the only lager in our seasonal rotation. The dark brown color and foamy head give the impression of a stout, and the incredible richness of the roast doesn’t belie this impression. There is a distinct Noble hop aroma. The malty finish is in keeping with the style. The overall impression is of a dark beer, with the roasted character of a porter. Expect to see it whenever I feel like dealing with the hassle of brewing it.
