Dark Apparition

Russian Imperial Stouts are one of my favorite styles of beer and Dark Apparition is with out a doubt my favorite beer to brew. We stuff 850lbs of malt into our 7bbl mash tun. By the end of the mash dark malts are spilling onto the brew house floor. I wanted this beer to include all the great flavors I admire in my favorite Russian Imperial Stouts chocolate, coffee, roast, dark fruit, caramel, and some nice earthy/spicy hop character. The color is midnight black and the body is extremely chewy and dextrinous. Dark Apparition is a huge beer with tons of character.

The darkness was so complete that candles were required from noon on." Dark Day IPA is a collaboaration with Dave Richardson from Gardner Ale House. Herbal hop aroma is complimented with roasted malt character. American de-husked roasted barley does not lend a bitter acrid flavor but imparts a roasted character that melds with low level caramelized malts. We first brewed this beer to kick off the Latona’s Winter Beer Series in 2009. Proprietor Bob Brenlin asked us to make a special beer that he could serve at the Latona, Hopvine, and Fiddler’s Inn, and since it was set to debut on the Winter Solstice, the darkest day of the year, especially here in Seattle, we were only too hoppy to oblige: we squished together the best aspects of Porter and IPA, keeping the dark malt complexity while pairing it with the assertive hop spiciness of Centennials. Black India Pale Ale is oxymoronic, of course, so we like to call this a Cascadian Dark Ale, to reflect the fact that our weather here is generally dark and we like our beers with hops and introspection. O.G. 17 P, 6.5% ABV, 75 IBU.
