Lior Lev Sercarz’s spice shop in New York City is called La Boîte (pronounced “la-bwat”), which simply means “the box.” Only the stuff in Lior’s boxes is not so simple. There’s a reason he is known in kitchens around the world. There was a time in Europe, hundreds of years ago, when spices were worth their weight in gold. Time hasn’t dimmed the evocative power of spice, but many of us don’t really understand what it can do. Lior is sometimes called “the spice whisperer” or the “the spice wizard,” but he prefers to be thought of as a chef (he spent years cooking with renowned chef Daniel Boulud) or even a spice therapist. When our brewmaster encountered Lior’s transporting, impressionistic spice blends, he knew that a kindred spirit had to be blending them. Once the two of them met, they started dreaming up beers by the dozens. For now we bring you Cuvée La Boîte, a Belgian inspired beer in the “Grand Cru” style, subtly infused with Lior’s unique blend of Mishmish N.33 (lemon, saffron, crystalized honey), fresh kaffir lime leaves, and rare Espelette peppers from the French Pyrénées. In his book The Art of Blending, Lior compares making a spice blend to organizing a party. He asks “whom do you invite?” Well, we invite you, of course!

The Belgians, they say, don’t actually much believe in the idea of beer styles. Having been to Belgium, we have to agree – we can lump some beers together by type, but Belgian brewing has a sort of wooly individuality that we admire. We are surely telling the truth if we say that British and Irish dark beers tend to be colored and flavored by roasted malts. And it’s equally true to say that Belgian dark beers tend to be colored and flavored with caramelized sugar syrup, giving them a very different set of flavors from their cousins across the Channel. Well, it doesn’t have to be that way. We love our Belgian yeasts and we also love stout, so you knew this would happen eventually. Brooklyn Cuvée Noire starts with a solid base of German malts, builds color and flavor from British and American roasted malts, gains rum notes from Mauritius raw sugar, grabs a hint of citrus from sweet orange peel, and then ferments under the flag of Belgium. Our Belgian house yeast lends the beer a gentle spiciness on a dry, brisk palate displaying light notes of chocolate, coffee and citrus, all underneath a fluffy tan head. The finish is clean and dry. Cuvée Noire is big enough to take a steak to dinner, roasty enough to love Mexican molé sauce, and complex enough to enjoy with nothing more than a good conversation. And as for the style thing, well, we’ll all just have to relax about this one. I mean, we’re not even sure that Belgium even has a government right now, and they don’t seem to be worrying much about it. So have yourself a Brooklyn Cuvée Noire. It’s from Brooklyn, not Belgium. We don’t have a king. Don’t fence us in.

We’ve decided to join the pumpkin and coffee beer game all at once with Cuvee Pumpkin Latte. This increasingly popular flavor combo transfers over to the beer world seamlessly. We start this beer with 300 pounds of pumpkin in our mash. Next, we add milk sugar and pumpkin spice to the boil. We ferment the beer with vanilla and right before packaging we turn the entire fermenter into a cold brew coffee tank where we add freshly ground Cuvee Brazil Fazenda Pantano Coffee. The end result is a wonderfully delectable and warmhearted beer to enjoy any time of the day.

Cuvêe Renê Grand Cru Gueuze Lambic

Nowadays, Lambic on draught is hard to find. Only in a few pubs in and around Brussels you still can taste the curious sherry-like flavoured beer. Nevertheless, since 1880, Lambic was bottled to simplify transport but also for conservation properties. This method was the birth of Gueuze: Before the bottling of the Gueuze, a blend is made of 2/3 young Lambic and 1/3 old Lambic. The right ratio young/old is depending on the maturation degree (end attenuation) of each of them. The bottles, with the wild-spontaneous yeast flora, are refermented in the cellar (Method Champenoise). After 6 months the Gueuze obtains a golden color and a cidery, winey palate; reminiscent, perhaps, of dry vermouth with a more complex and natural flavour. It is often served as an happy hour drink in Brussels. It is the traditional beer for carbonade, as well as a beautifully based beverage with seafood or other salty meals. It's also delicious with cream sauces. Beside the traditional Gueuze (the Gueuze Grand Cru "Cuvée René"), there is also a more commercial Gueuze that dominate the market. It is filtered, pasteurized and has a more sweet taste.

Two-year-old lambic in which fresh HallertauMittelfrüh hops have been soaked. A perfect balance is struck between the lambic’s natural acidity and the Hallertau hops’ refined bitterness. In order to preserve the subtlety of the hops, the lambics selected for Cuvée Saint-Gilloise are elegant and refined such that the balance between acidity and bitterness is not disturbed. Since there is no blending with young lambic as for gueuze, and no addition of fructose as for fruit beers, secondary fermentation of Cuvée Saint-Gilloise in the bottle is brought about by adding liquid sucrose. Like all the beers produced at Cantillon Brewery Cuvée Saint-Gilloise will keep for a very long time in a good cellar, but also like all hopped beers it is best drunk when young so as to be able to fully enjoy the floral aspect of the hops.

The Cyclone Series’ first foray into barrel aged beers is nothing short of unique. With our rum distillery in the same building that we make our beer in, it only made sense we would choose to age a beer in rum, not whisky or bourbon, barrels. After over a year of testing and experimenting, we created an inky black porter to carefully age in our Thomas Tew Rum barrels. After just the right amount of aging, the resulting beer is a bold and roasted porter balanced with oak, butter, spice, and rum notes from the barrel aging process.

Rye beer, or Roggenbier is an ancient style of beer common in Germany until the 15th century. The signature ingredient is Rye malt, which is difficult to brew with but imparts an earthy ’spicy’ flavor to a brew that really can’t be gotten any other way. After extensive research, our brewers accepted the challenge to bring back this ancient style of beer. Loaded with Chinook and Saaz hops to complement the earthy and spicy flavors imparted by the rye malt, Ryan has a really complex body. Dry-hopping with Amarillo give this beer its American Pale Ale character. Love alone gives it its 8% ABV.

Cyclone Series Sabrina

A limited release “Belgian Pale Ale,” Cyclone Sabrina is the delightful offspring of two brewing worlds – Belgian and American. She was brewed in October on the second birthday of her namesake, Sabrina Ryan, daughter of one of Newport Storm’s founders. Cyclone Sabrina (the beer) is quite simple up front (only pale malt was used) and relatively straight-forward without complicated hopping schedules. We chose to let the authentic Belgian yeast’s attributes shine—with all its yummy carried phenols, bubble gum esters, and clove smells. A Cascade citrus background ties this beer to American Pale Ales without overshadowing the yeast’s dominant profile. Lastly, this is our first unfiltered brew released at the New Newport Storm Brewery and is, like ‘Cyclone Sabrina Ryan’ – beautifully unique.

This latest Cyclone is a "Dunkelweiss." In German this means, "Dark White," or, "Dark Wheat." Most often, wheat beers are pale. However, though Cyclone Tim uses a Hefeweizen yeast to impart banana and clove to the brew, he has dark, roasted, CHOCOLATY malts - totally spinning your tastebuds on their happy heads. That’s right. We just used the words chocolate and bananna to describe a beer. In the words of Derek Luke, "Yummmmm!"

Ursula adds yet another unique twist to Newport Storm’s Cyclone Series of limited release beers. A first for the series, Ursula employs two different yeast strains (lager and champagne) added at different times to create this complex pale lager. Traditional European malt and Czech Saaz hops connect this beer with the roots of lager while the champagne yeast gives it a remarkably dry and crisp finish for a beer over 6% ABV. Essentially the same sciences behind what makes sour cream or yogurt sour are working in Xavier, where we use other microorganisms other than yeast to purposely give the beer a tart flavor. Cyclone Yoko is like enjoying a day at the beach… in a 12oz bottle! The latest in the Cyclone Series by Newport Storm, Yoko is a dark ale with coconut flakes, reminding one of warm beaches and sunny surf. Using a „depth-charge‟ method, much like a French press, schemed up by Brew Master Derek Luke, we were able to take the floating bits of real coconut and sink them to the bottom of the bright tank to craftily infuse the natural flavor into the beer, that would bring out the tropical essence, without using any extracts. “We discovered that by “dry flaking” a beer with an insane amount of shaved and toasted coconut after fermentation, we achieved a coconut flavor and aroma that paired perfectly with the darker base beer,” explains Luke. “The addition of German Chocolate Wheat enhances the richness and compliments the silky mouth-feel of the coconut.”

In 2006, the Coastal Extreme Brewing Crew started the Cyclone Series, a clever idea before limited release beers were the norm. This clever idea produced 26 different beers ranging widely in taste, complexity, and lack of sleep for our brewers! We traveled through the alphabet, with no shortcuts, starting with Alyssa and now introducing, the last letter ‘Z’ for Zach, an imperial oatmeal stout. Cyclone Zach is an intense beer, both in its brewing and flavor profile. Six mashes, rather than the usual two, were required to create this brew, leading to round the clock brewing. Boasting a 10.1% ABV Zach is truly a big and bold beer, but his most important characteristic is smoothness. To create Zach’s silky smooth flavor, the brewers combined extra tank conditioning time with the addition of the most flaked oat ever used in a Storm brew, to balance the otherwise over intense roasted backbone of the beer. This Cyclone will stand up to the test of time, our Brew Master recommends aging this beer for years to come.
