Dark Earth

A stout brewed with a virtual cornucopia of malts, among these are three different heavily roasted malts, both oats and rye, a nice trio of caramel malts, all blended with a nice base of pale malt. A special addition of wood fired, donkey milled, local Sorghum in the whirlpool caps off this brew, that weighs in around 6% abv.

Herbs and Spice - Spring Brown Ale In the dark of the night is made this darker roast brown ale. A little caramel malt for roundness of flavor is added, but it ends crisp and clean. A healthy amount of cardamom and Turkish fennel play with a little astringency from mugwort - requisite for all magical ales of this character. Kaffir lime leaves add some bright character to the finish to balance the darker spices. Dark Helmüt

Dark Helmüt is an extra-strong version of a German black lager. It displays a mellow roasted character that is juxtaposed with the enjoyable lager crispness. We first brewed this beer in 2012 for our annual Vankleek Hill Oktoberfest, and it was a huge hit with festival goers! The recipe for Dark Helmüt was designed by Beau’s brew team member Kevin James. History & Style Schwarzbier is the name for the German black lager style. These beers have a smooth malt character and typically finish rather dry. Dark Helmüt has refined mocha inflections and a surprisingly subtle roasted flavour for a beer as dark as the furthest reaches of the galaxy. Malt depth maintains a pleasant balance and keeps the bigger alcohol presence nicely integrated. Tasting Notes Malty, bready notes (think pumpernickel without caraway) provide the backdrop to this clean, crisp beer. The finish is bright and crisp.

The Dark Knight – The Dark Knight is our double fermented Old Eight Porter, aged in 45th Parallel barrels for 6-12 months. Double fermented refers to a second “feeding” of various sugars to increase the alcohol content as well as bolster the flavor. Chocolate, coffee, charcoal, and bourbon are the familiar notes for this beer. Served in a 5 oz pour, the bourbon note from this tap is very prominent as it is a first time use of the barrel. The Dark Knight Returns – The same profile as the Dark Knight, however, since this is a second time we’ve used the barrels, the bourbon note is less prominent and as a result the beer is more rounded and balanced.
