This beer is all about the interplay of toasty malt sweetness and the unique characters of the East Kent Golding hop. This golden-amber ale has a delicately balanced aroma of malt sweetness and aromas of floral/honey/spice/with hints of lemon and lavender from the quintessential English hop: East Kent Goldings. This English Ale has a medium-full body, balanced flavor, and a smooth dry finish.

Eagle Claw Fist

Eagle Claw Fist utilizes the same Chico yeast that shaped Hoppy Feet and Brown Angel. Canadian Two Row, English Crystal, and a little English Black Patent malt provide a sweet, balanced backbone. Simcoe, Centennial, and Citra work together to create a unique hop assault, with an intense bitterness that manages to leave your palate in one piece and is harmonized by the flavors of tropical fruits and flowers. Earl (1911-1985) was our grandfather’s brother; Hill Farmstead Brewery rests upon the land that was once home to him and his 13 siblings. In his honor, this Stout is crafted from American malted barley, Flaked Oats, English roasted malts, American hops, Organic Guatemalan Coffee, our ale yeast, and water from our well. Early Morning Stout

Early Morning Stout was brewed with the “American stout” substyle in mind. It has a nice roast and chocolate aroma/flavor but also includes a significant amount of hops that are typically associated with our region. The resulting beer has a pronounced chocolaty roast flavor (slightly less than its counterpart Stuart) but also includes a nice hop aroma and flavor in the background. A smoother mouthfeel than Stuart, Early Morning stout has great flavors and not just a dominant roast character like its mountainBeer counterpart.

But a true champion, face to face in his darkest hour, will do whatever it takes to rise above.” -Kenny Powers Every now and then, a person realizes that it is high time to go back to one’s roots, find the familiar, re-connect with reality, and take things from there. That’s what a certain, ignominious, former Major League baseball player (with a rocket arm, by the way) had to do, and perhaps there’s some comfort in the realization that going home is an option for all of us. Legion customers are well familiar with our practice of keeping things close to home whenever possible, brewing with local ingredients every chance we get. Our reasoning: North Carolina is our home, and we love this place! We love its people, its climate, its farmers, its dirt, etc… Said another way, we aim to showcase the local terroir –the set of epigenetic qualities that impart agricultural characteristics unique to our area. That established, Legion’s brew staff may have outdone themselves with ‘Earthbound and Down’ (Sweet Potato Belgian Blonde, 7.3% ABV, 24 IBUs.) Cliff Claven, were he still on the airwaves, would undoubtedly point out a ‘little known fact’ that the Tarheel State leads the nation in sweet potato farming, providing over 38% of total U.S. production. Grown in North Carolina dirt, it’s harder to imagine any other crop being a better ambassador for our State’s terrior… Perfectly timed to match the cooling of the seasons, Earthbound and Down is packed with local sweet potatoes and cinnamon, sure to warm your heart and soul. Expect subtle Belgian complexity, honey-like sweetness, and a creamy mouthfeel. As you find yourself falling for Autumn, this specialty brew will illuminate your way back home…

Earthworm

In anticipation of summertime, we went for a refreshing rye ale with Earthworm. But why call it earthworm, you may ask? Well, we used petite wormwood (the younger, non-psychoactive cousin of wormwood, a key ingredient in absinthe) as a bittering agent. We found that using two pounds in the boil gave it an especially earthy aroma, in addition to a bitter quality very distinct from what you'd normally get from plain ol' hops. That explains the “worm” but the “Earth” came about because the beer was released right around Earth Day. We love happy accidents.
