American Wheat – Wheat, spicy hop profile, light bodied

The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold. The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer. This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

Evora is a golden hued beer, brewed with a 2-Row and Maris Otter malt blend. It was hopped with Northern Brewer, Mt Hood and Sorachi Ace hops. The primary fermentation used a classic Belgian yeast strain. The beer was then aged for 16 months in Portuguese Brandy barrels with Brettanomyces. The finished beer exhibits notes of honey and stone fruit in the aroma. Citrus and oak dominate the flavor giving way to hints of bread crust. Evora is medium bodied with a fruity, dry finish.

Our anniversary ale, ELEVEN is brewed with British, German and French malts, American hops and milk sugar*. It is aged for weeks on locally roasted Sumatra Coffee Beans. Enjoy the deep mocha color, sumptuous roasted aroma, rich flavor and smooth creamy finish. *contains lactose.

A robust American ale brewed with four different rye malts and fresh centennial and crystal hops. It is partly fermented in Kentucky Rye Whiskey barrels then carefully blended. Enjoy the gorgeous ruby color, strong aromas of vanilla and black cherry, earthy flavors of nuts and oak and the warm, spicy finish.

Our anniversary ale, THIRTEEN is carefully brewed with raw and malted wheat and flaked oats, assertively hopped with Citra and Sorachi Ace, spiked with an addition of orange and lemon peel and vigorously fermented with an American Ale yeast. Enjoy the incandescent appearance, immense citrus aromas and flavors, soft and fluffy mouthfeel and bitter zing.

A Belgo-American ale brewed with domestic barley and French wheat malts, the finest continental and US grown hops, and fermented with Belgian, English and Wild yeasts. Enjoy the glowing opaque appearance, fruity and herbal aromas, zesty mouthfeel and bone-dry finish.

Dry Irish Oatmeal Stout brewed with cold pressed organic Carrabassett Coffee. Rich and roasty. Brewed with floor malted Maris Otter barley from the UK for a full malt character. Flaked oats from Maine Grains enhance the creamy mouth feel. Kent Golding hops from the UK give balance.

Exhibit C is a nod to our hundredth (Centennial) brew. We used roughly 3 times the malt of our Presumed Innocent IPA, and dry hopped the beer to add as much aroma as we could squeeze out of the Centennial hops. The result is exquisitely rich, but more balanced and much less bitter than most will expect. It’s a one-time-only offering, and it won’t last long. We offer Exhibit C into evidence!
