The WLBC Farmhouse Ale is our American interpretation of the classic Saison style that originated in the French speaking region of Belguim. Like the Saison (French for “Season”) of old, our ale is brewed to be refreshing yet complex summer ale. The saison style was truly defined by the region, so the Wooden Legs Brewing Company version calls on unique hops, grains and cereal of the USA. The grain bill consists of American ale malt, malted wheat and even a touch of corn. Crystal hops provide a mild floral and the spice to balance out the malt. The Belgian yeast provides additional subtle spices and esters and ferments to a wonderful cloudy complexion.

Farmhouse Ale

Broadly speaking, a farmhouse ale - or saison - is an esoteric style native to the French/Belgian border region. Characterized by a golden to light amber color, light to medium body, and noticeable fruity/spicy esters, this beer, known also as a “country ale” was traditionally brewed in primitive conditions in farmhouse breweries for consumption throughout the warm weather by seasonal farm workers. Our Farmhouse Ale is an homage to traditional European beers brewed for quenching the thirst of farm workers, or “Saisonaires.” A unique Belgian Saison yeast is used to impart a mixture of spicy, fruity, & earthy notes along with lip-smacking palatability.

Farmhouse Hatter

Farmhouse Ales were originally brewed as “Provision Beers” by farmers in Belgium and France, brewed in the winter months to be consumed during hot summer work days. They were traditionally brewed light and refreshing to aid in both hydration and energy. Wheat and Pilsner malts were used to lighten up the body of this Mad Hatter version. It was also fermented hot with a strain of Belgian Saison yeast to develop flavors of green apple, pepper and fresh cut hay. Brewed for Hatter Days!

Brewed in the style of the farmhouse ales of Belgium's southern countryside, Hardywood Farmhouse Pumpkin utilizes a blend of rye, wheat and barley in the grain bill, earthy flavoring hops and a classic saison yeast. Ripe, flame roasted Virginia sugar pumpkins and brown sugar provide a hearty backbone to this 8.5% ABV beer. Freshly ground Ceylon cinnamon, whole Grenada nutmeg, whole Madagascar clove and whole allspice harmonize with pounds of freshly sliced organic ginger root. A beautiful hue of autumn russet, Hardywood Farmhouse Pumpkin displays a voluminous head, with a bouquet of aromatic fresh spice. Medium to full in body, this ale offers a balanced flavor of caramelized pumpkin and pie spices, with a lingering finish laced with a hint of fresh ginger. Sugar pumpkins came from the Farm to Family Market on Mechanicsville Turnpike and from the Village Garden. Peruvian organic ginger came from Ellwood Thompsons Local Market in Carytown. Pumpkin Pie Spice came from C.F. Sauer, right around the corner from Hardywood. Whole Ceylon cinnamon, whole Grenada nutmeg, whole Madagascar cloves and whole allspice came from Penzys Spices in Carytown. All are local Richmond businesses.

'Style' is a dirty word in Belgium and as you may have guessed can be around our brewery, as well. Saisons, traditionally, are fermented to dry tartness and liberally hopped (for a Belgian style, anyway). Witbiers are slightly sweeter, usually spiced and always pretty light in color. Why compromise? Hoppy for a witbier, possibly? Offbeat for a saison, for sure? Our unique contribution: Triticale, a relatively modern hybrid of wheat and rye. Tradition gets the Deep Ellum treatment.
