Imperial Cherry Gose

New York State ranks 4th for tart cherry production in the US, with the majority of the acreage located in four Western New York Counties located about 2 hours from our brewery. We source our tart cherry juice from a grower in Niagara County on the shores of Lake Ontario where the glaciated soils and lake-tempered northern climate are ideal for growing tart cherries. Tart cherries are known as a “super food” and their price reflects this moniker. They have one of the highest levels of antioxidants of any food, a truly brilliant red color, and a clean, bright, juicy aroma and flavor that’s accentuated by their natural acidity. We maintain a culture of Lactobacillus buchneri that is used to sour wort over three days, starting at a pH of 5.5 and finishing around 3.4. After souring is complete, the wort is boiled, hopped, spiced, cooled, and pitched with our house ale strain of yeast. After roughly 24 hours of fermentation, the tart cherry concentrate is added directly to the fermentation vessel. Exactly when the cherry juice is added is a delicate balancing act of adding the juice (more sugar) early enough so that the fermentation will complete, but late enough that the delicate flavors, aromas, and colors of the juice are preserved as much as possible. It would be a travesty to add such beautiful and rare juice to hot wort, don’t you think? The finished beer is a striking, lustful shade of red with a persistent white head and durable lacing thanks to the large portion of wheat in the grist. The nose is defined by equal parts bright lactic acidity and cherry notes with a hint of coriander. On the palate, the strong lactic acidity is accentuated by the natural tartness of the cherry juice. Quantitatively, this beer is quite sweet, but we find that this level of residual sweetness is just enough to balance the acidity and that the overall perception of the beer is actually quite dry. The beer finishes very clean and in conjunction with the salt in the finish, it definitely makes you want to come back for more.

Much in the same way, our Imperial Cherry Saison undergoes subtle but noticable changes while cruising from kettle to bright tank. Like the sun ripening fruit, a pit stop makes this beer better. Cherry Saison is aged with French Oak staves, imparting overtones of spice and balancing the natural sweetness of the cherries. Cherry Saison is the first in this series to incorporate oak aging. Enjoy it as a dessert beer, or tilt it back while sitting under a shady tree on a warm summer afternoon.

This robust dark brew has been created in conjunction with Crescent Moon to coffee to come up with a special five bean blend to bring out the depth of the beer. Originally produced to celebrate our 10th anniversary, this has now become our late-winter seasonal. Note the aromas of toffee, licorice and coffee roastiness. Then take a sip--there's a malty richness on the palate followed by chocolate, coffee, spices and perhaps even some licorice character from the Mount Rainier hops. The beer finishes with a subtle black cherry/berry character from rare Ethiopian Sidamo beans. Oh yeah, it also packs a royal kick at 8% alcohol.

France has a small brewing culture but their independence and culture is worthy of great respect. This ale is based around our house French saison blend. IFA features mostly pale and wheat malts and a hefty dose of sugar to dry this big boy out. Hopped and dry hopped with massive amounts of Cascade, Columbus, Centennial and Chinook hops to double IPA levels. So...is it a Tripel IPA? Hoppy saison, a new style? Who knows and more importantly, who cares. Beers like this don't deserve to be put into tiny boxes.

THE Moscow Mule of Beer! Perfect with your favorite craft vodka (we like Southern Tier Distilling Co.'s Vodka) over ice in a copper mug. Brewed with ginger, lime, & agave. Fresh grated ginger & a bit of red pepper flakes add a spicy, somewhat hot flavor note. Ginger adds a nice pungent, floral aroma as a complement to the sweetness of the agave syrup, lime & malt backbone. Lime concentrate adds a mildly acidic & tart note that balances the Agave sweetness. It adds a new dimension of flavor & aroma. Organic Azul Raw Light Agave Nectar was added directly into the kettle at the start of the boil. Agave is comparable, though not identical, to honey. The lighter syrups undergo less heating & a more thorough filtration for a more mildly flavored product. We chose Cascade & Willamette hops because of their spicy, citrusy aroma & grapefruit notes. The sweetness of lime & agave pair nicely with these bright, floral hops. The slight spice of Cascade hops contrast the lime concentrate. This beer blurs the lines between craft beer & cocktails. Think the “Moscow Mule” of beer!
