The first release in our new experimental series, Allagash Interlude pushes the limits of beer. An innovative brewing process, special fermentations, and French oak barrel aging all contribute to a beer that has remarkable wine-like qualities. Two yeast strains were used to create this unique 9.5% ABV Belgian style ale. The first, a Belgian farmhouse yeast, establishes the flavor foundations of a classic Belgian-style ale. The second, a house strain of Brettanomyces yeast, brings it to the next level contributing an intriguing myriad of flavors including pear, apricot, graham cracker, and bread crust. Finally, a portion of the Interlude is aged in French Merlot and Sirah oak barrels, which impart a distinctive vinous plum character and a drying, almost tannic finish. Try complementing its audacious character with food pairings such as sausages, salami, smoked meats, and bold cheeses. True to traditional Belgian-style brewing, we bottle condition the Interlude. Just prior to bottling, a fresh dose of sugar and yeast is added to the ‘still beer’ (at this stage there is no carbonation present). After bottling, the beer is aged in a warm room, where the fresh dose of yeast ferments the sugar and naturally carbonates the beer.

Intermezzo

May is a time for palate cleansing. Stepping past the heavier flavors appealing in the dead of winter, we arrive at the sprightlier flavors of spring and summer. In our attempt to rejuvenate, we interpreted Chef Paul Liebrandt's mid-course of green apple wasabi sorbet as a sour ale. Pureed green apples from France are added to the fermentation in order to define the familiar acidity of a lactic sour, then the beer is "dry-hopped" on fresh wasabi roots. In Intermezzo, sweet and piquant whiffs of real wasabi cleanse the bright tartness of green apple while the nutty finish of the kernel of pale malt is left to eradicate winter's weight. DrinkIntermezzo because it is time to refresh.

These “terms of agreement” highlight the human element of the brewing process. Even with agreed-upon ingredients, the hands that craft it are hugely influential. Another challenge in this collab? Hops, a brewer’s best weapon on the IPA front, are banned from there battlefield. To create a Zero IBU IPA, we all agreed on a list of ingredients – spearmint, bay leaves, rosemary, juniper berries, and elderflower – to replace the bitterness typically imparted by hops.

Into The Dark Unknown

This is Infinite’s version of what some would refer to as a Russian Imperial Stout; but since we brew all ‘Belgian Inspired’ beers, this is our version of a dark, rich stout. The beer is dark; just as total darkness is. At first glance many fear it, but with a slight chance with the aroma, fears start to subside and are replaced with a strong urging to enter the darkness. This is an extremely complex beer brewed with numerous malts and loads of hops to ‘tame’ the rich malt character. Smell, Taste, Enjoy! Appearance – Black as Night – Opaque Aroma – Rich dark malt with nice chocolate notes, dark fruits, roast nuts, cocoa and mild oak. Flavor – follows the aroma with deep flavors of roast malt, chocolate, figs, and light oak. Complex Mouthfeel – full bodied, smooth and creamy, light velvet carbonation with residual malt and cocoa sweetness. Finish – lingering, refreshing.

Into The Mild

A collaboration with our good friends at Mystic Brewery, this English-style Mild Ale was brewed with traditional British malts, hops and yeast. Using floor-malted Maris Otter as the base, Extra Dark Crystal, Amber and Brown malts were combined to pack this small beer with a malty punch! For a dark ale, this Mild is light-bodied and sessionable, showcasing moderate caramel and toast with hints of chocolate and stone fruit from the malted barley. A deft addition of Black Treacle was added to the kettle to accent the maltiness with hints of molasses and golden syrup.

Medium bodied and light amber in color. It is slightly cloudy because it is unfiltered. Filtering would remove some aroma, so we don’t want that! Abundance of citrus(grapefruit, orange peel) with a touch of pine in the nose to start. Once it hits the mouth it really opens up. I get a lot of tropical fruit. Grapefruit, mango, pineapple, passion fruit, lemon, melon, and flower flavors immense my palette. It then finishes with some white wine with grape flavors and passion fruit.
