We took a traditional IPA recipe and brewed it with Lager yeast. The lager yeast just takes that nice bitter flavor and gives the beer a nice crisp clean finish.

Rich in color and bold in taste, our U.S. style Brown Ale combines roasted malt with two additions of specialty selected hops to produce a well-balanced ale with a satisfying finish.

Our IPA is an unfiltered cross between an English and American IPA, with a strong, dry bitterness balanced with a slight malty sweetness. A mixture of first-rate U.S. and Belgian malts, combined with English roasted barley and highly hopped with Cascade and Warrior hops make our IPA a brewery favorite.

Named due to it's popularity with London railroad porters, it's known for its dark, rich, and roasty notes.

A British style Old Ale perfect for easing the cold winter months, our Winter Ale offers a malt selection with hints of fig and chocolate, creating the perfect cozy balance of hops and malt.

The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly. In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower. It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste. The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities. After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter. Iris is brewed only once every season and all the beers come from the same brewing. This is why the beer is dated. The second fermentation is obtained by adding liquor. Although it is a spontaneous fermentation beer, the Iris is very different from the Lambic. The amber colour and the bitter and slightly caramelized taste make it a complex beer.

Irish Ale, Boulevard’s early spring seasonal beer, is our Midwestern tribute to the legendary red ales of old Ireland. Our recipe combines six kinds of pale and roasted barley malts to provide a rich, toasty flavor and tawny reddish hue.

Same as our regular amber with a slight hint of whiskey and oak give it a crisp finish.

In honor of the owner of the St. Francois Winery & Vineyard, Skip Daugherty, who has played the biggest part in helping us bring our beers to the public. Put simply, this is an Irish Red style of beer with American influences, just like Skip! According to the BJCP Style Guidelines an Irish Red delivers moderate caramel malt flavor and sweetness, generally no flavor hops, although some examples may have a light English hop flavor. It is with our hops and yeast where the American influence comes in as we utilize Cascade hops and American Ale yeast. A good looking beer with plenty of malt and a hint of hops it's Irish American Red!

A highly drinkable golden beer that we brew for the time of year around St. Paddy's Day. This beer has a nice floral aroma blending with a light malty sweetness; it then finishes crisply and is dry enough to make you want another sip immediately. Irish Channel Stout is an American style stout that has sweet malt flavors of caramel and chocolate, complimented by a crisp bitterness produced by roasted barley and American Hops. It was named after the neighborhood that the brewery is located in, the Irish Channel. The complex malt bill of pale and roasted malts result in this well balanced stout that is smooth, rich, dark and delicious! And watch out – ABV 6.8%! Due to it’s extreme popularity, this brew has been moved from a winter seasonal to a year-round beer.

Shannon Irish Cream Ale is our modern take on an ancient Irish recipe. Shannon Irish Cream Ale is brewed to have a subtle malt start and the rich character associated with the finest Irish pale ales. It is fermented with ale yeast at a low temperature, causing the yeast to halt fermentation just before full attenuation. The beer is allowed to settle for a few days before we start a secondary fermentation with a lager yeast. This combination of yeast and fermentation temperatures gives Shannon Irish Cream Ale a complex start with wonderful fruit aromas reminiscent of apricot and pears. It also provides the drinker a crisp and dry finish. In a word…awesome!

Schlafly Irish-Style Extra Stout is a full-bodied and full-flavored rich, dark ale with a malty sweetness balanced with plenty of hops to create the perfect dry stout.

"When Irish Eyes Are Smiling…" as the ol' tune goes, and now you know why. Dark in colour but light in body. It all starts with husky barley grains, some of which get toasted and roasted, then boiled up with some earthy hops, then fed to the yeasties who give us alcohol in return, then pumped full o’ nitro for a creamy and silky mouthfeel. Faintly woodsy, smoky, minty. Ah yes, "…let us smile each chance we get."
