Traditional cider apples . The climate and soil are vitally important to the production of the different varieties such as Clara,Blanquina,Raxo,De la Riega, Xuanina,Perico,Verdialona,Regona or D.Tresali. The Harvest begins in the second fortnight of October when the maturity of the fruit and the weather conditions are at an optimum.The apples are washed and slowly pressed in the pneumatic press at low pressure. The juice is then decanted, sifting out sediment leaving a clean, cold apple juice which is then left in the “LlAgar cider factory, to ferment. It is left the necessary length of time for the cider to mature and be bottled at the best moment.

Our friend Chase Healey from Prairie Artisan Ales took a break from catfish noodling and playing flyin’ Lincolns to come down to Austin and brew a beer with us. He brought some rosemary from his garden, and we picked some lemon bee-balm from our ranch to add to the wort. From there, we allowed plenty of time for a bunch of weird critters in some oak barrels to do all kinds of interesting things with the beer. Unfiltered, unpasteurized, and 100% bottle-conditioned.

This is a well-balanced Belgian that gives you plenty of caramel as well as hints of bananas both up front and on the finish. The fruity esters, a hallmark byproduct of fermenting with most Belgian yeasts, are wonderfully present without being overly dominating. Brewed at the request of and with Ted Schneider of Moe’s Original BBQ – Fort Collins, when Ted prepared his 5th Anniversary beer dinner at Moe’s he paired this beer with pork belly and a strong herbal/garlic/anchovy sauce that perfectly complemented both the sweetness and the “nana” flavor in the beer. The only thing naughty about it is, perhaps, the ABV, which is cloaked a bit by the balance of the beer.
