No Joka Mocha is a coffee oatmeal chocolate stout that is decidedly weighted towards the coffee end of the taste spectrum. This brew has a blackish pour with a creamy tan head. Solid coffee aroma greets the nose with deep rich malts in the background. It has a medium body that is slightly sweet, light chocolate and finishes smooth with the oatmeal. Our special blend of Blue Batak Sumatran Coffee used in this brew comes to us specially roasted from our good friend Woody at Finer Grind Coffee Roasters. No Paddle Amber Ale

"Make me an Amber!" A friend of mine mentioned this to me a year or two back and these words kicked into motion a series of recipe attempts and batches that would ultimately result in our house amber. American Amber is a very broad and forgiving style that really serves as a "catch-all" category between pale ales and porters that doesn't include I.P.A.s and ryes. Ambers can range dramatically in bitterness and alcohol volume and even in color. That makes for a very broad palette for a brewer. My goal with our amber was to capture a beautiful reddish hue that reflected the copper that this city is famous (or perhaps infamous) for. I also wanted to create a flavor profile that challenged people with hints of that transition from a pale ale into a porter. So, our amber features a strong 2 row backing with plenty of roasted malts giving not only that beautiful color but the toffee and caramel flavor that suggests that there's a porter in there just begging to get out. All we needed was a name to bring the amber home. We struggled for some time, taking suggestions from the owners, friends and of course the young lady who recommended we build the amber in the first place. Ultimately, as it so often does, the name presented itself. We were struck. We couldn't come up with a name and we had a beer ready to go. Somebody in a meeting mentioned that we were "Up the crick" if we couldn't put together a decent name. "No Paddle" was born. We hope you enjoy our amber.

Brett Barrel-Aged Sour Stout No Rest For The Wicked is a distant cousin of No Sleep Till Brooklyn, a collaboration beer we did with Jeppe of Evil Twin/Tørst almost a year and a half ago. Because we love the interplay of tart and roasty so much, we decided to brew a similar style, this time with a revamped malt body and more bugs! Yes, that’s right, this stout is a veritable mecca for the sorts of yummy bacteria that make you pucker. With strong notes of cocoa, delicious undertones of sour cherry, complex brett-derived aromatics, and a 6 month power nap, this beer is one of those perfect sippers we wish we could keep all to ourselves. Didrik Crappe was a Copenhagen lad who set sail to Tranquebar in the early 19th Century to establish a herring meal factory in this exotic Danish colony. He suffered terribly from indigestion because of his mother’s home cooking, esp. her extremely spicy chicken curries that he was forced to eat several times a week. Some historians maintain that the whole business of founding a herring meal factory was just an excuse to get away from his mother’s pots and pans. There is a legend saying that Didrik posted himself in the bow of the clipper carrying him away from his beloved hometown, and exclaimed "No more rice and curry for this fair Dane!" But the story has a happy end. Thanks to the fine lager brewed locally in Tranquebar, Didrik’s indigestion was cured, and in fact he soon established his own brewery out there, creating a beer so tasty that rumors of it flew all the way back to Denmark. Perhaps the herring meal was the secret ingredient that distinguished Didrik’s brew from all others. Anyhow, soon clippers carrying nothing but barrels of his product were leaving Tranquebar for Copenhagen every day of the week. Thus the Indian Pale Lager was born. A crisp and dry Pale Lager with a base of only pilsener malts. Hopped – and dry-hopped – with Amarillo, Cascade and Citra. No rice or curry was added.
