No. 7 - Dihos Dactylion Barrel-Aged Sour Ale

Aged for eighteen months in fresh Cabernet Sauvignon wine barrels, Dihos Dactylion features a primary fermentation using a proprietary blend of saison yeasts, a secondary fermentation of our house brettanomyces wild yeast strain, along with lactobacillus and pediococcus bacteria added to sour things up. Dihos Dactylion bursts with aggressive aromas of red wine and a touch of brett; delightfully sour to the taste, initial lactic acid flavors hit high in the cheekbones before transitioning to complex layers of soft fruit, oaky-tannins and red wine.

No. Nine

It is not a wine. This is a unique style of ale. When a beer reaches 9% ABV it deserves much more respect. Originally our 9th recipe at 9% in 1997, the name was a fitting match. Over the years this beer has achieved a "cult like" following. It is brewed only in the Fall. Pick some up and relax with a little by the fire. It also stores great in the cellar for years.

Noble Prize

Noble Prize Imperial Pilsner is brewed using a starkly simple recipe combined with a painstakingly complex brewing process resulting in an imperial pilsner of subtle elegance and delicately balanced contrasts. A grain bill composed of 100% Pilsner malt makes a clear, yet restrained statement, answered by Saaz hop bitterness, echoes of which linger in the dry, crisp finish. Pouring brilliant golden in color, Noble Prize opens with aromas of bready, honey-like malt sweetness with subtle floral and black pepper notes from the use of Saaz and Mandarina Bavaria hops. With the flavor of freshly baked bread, the 100% pilsner malt base provides a crisp platform to showcase spicy herbal and earthy noble hop tones provided by first wort and end of boil hopping.

Noble Rot

This saison-esque science project gets complexity and fermentable sugars from two unique wine grapes sourced with our friends at Alexandria Nicole Cellars in Prosser, Wash. The first addition is unfermented juice, known as must, from viognier grapes that have been infected with a benevolent fungus called botrytis. This noble rot reduces the water content in the grapes while magnifying their sweetness and complexity. The second is pinot gris must intensified by a process called dropping fruit, where large clusters of grapes are clipped to amplify the quality of those left behind. "This is the absolute closest to equal meshing of the wine world and the beer world thats ever been done commercially," says Dogfish's Sam Calagione. Noble Rot is brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. It has a spicy white wine body and a dry, tart finish.
