Dubbel is a beer style developed by Belgian Trappists in the Middle Ages, part of a naming convention that also includes the lighter single and stronger trippel. All well and good, you say, but what's this “Nommo” business? Well, the Nommo are ancestral spirits worshipped by the Dogon tribe of the West African nation of Mali. The name is derived from a Dogon word meaning “to make one drink.” No, really. Nommo usually described as amphibious, hermaphroditic, fish-like creatures, were created by the sky god Amma, who caused them to multiply by splitting them into doubled sets of twins. Seeing a trend here? Maybe it's farfetched, but we think the story of the Nommo makes this whole enterprise a little more fun and interesting.

Noonan Black IPA

Black IPA doesn’t quite seem to make sense, does it? How can something that’s black also be described as pale? Noonan is our interpretation of a New England original, the Black IPA. Dark like a porter, but hoppy like an IPA, this seemingly contradictory beer style originated in 1994, in Burlington, Vermont by brewer Glenn Walters and under the watchful eye of Greg Noonan. Greg was many things, a brewing pioneer and author, founder of three brewpubs, 2005 Russell Scherer award winner and genealogist. When Greg passed away suddenly, Smuttynose’s brewing team wanted to brew a beer in his memory and this was the result. We hope you find it a worthy tribute as well. Noonan (the beer) looks like an ordinary porter or stout, until you get the pint up to your nose. You can’t avoid the big whiff of piney, herbal and citrusy American hops, but there’s virtually no roasted character. Ponderous, huh? When you take a sip, you’ll notice that the beer doesn’t taste a lot like a porter either. Instead of the expected astringency imparted by dark grains, you’ll find a depth of caramel malts and more American hops. Don’t worry that’s by design; it’s also what we love about the beer.

Named in reference to the crucial monastic tribulation of monotony. The demon embodies the concept of cutting corners and avoiding meticulousness. Monks were encouraged to court the Noonday Demon rather than ignore it – believing such would strengthen their person. Within this complex beer we utilized Golden Promise, Special B, Kilned Amber, and a sprinkling of Chocolate malts to impart toasty sweet flavors topped with fruit. This demon was nobly hopped lending it a subtle earthy character.

Peter our brewer has been able to form a good picture of how this specialty is brewed with our southern neighbors during his internship. This triple consists of 4 cereals, barley, oats, rye and wheat. Where barley causes the malting, rye causes the body and cream and the oats and wheat for the fresh test in the beer.
