Harvested locally from Simrayh Apiaries in Lemont, the wildflower honey gives a hive five of sweetness up front before 100 Eye-Bee-U’s of hop bitterness stings your bee-hind. A plethora of pineapple and grapefruit combs through the sweetness before leaving your palate buzzin’. Bee sure not to get stuck in the honey pot, though, bee-cause at 8.9% A-Bee-V, things could get a little sticky.

Ode to a Russian Shipwright

Ode to a Russian Shipwright is my tribute to the brewing legacy of Peter the Great. I use rye and spruce, ingredients that were important to the Baltic region and sailors, to create a porter honoring the time and tastes of Peter. And true to legend, I've brewed it strong enough to survive a cold winter voyage (from the brewery to the house). Rye, spruce, and roast highlight the nose and flavor, with complementary fruit and spice emerging as you drink. The flavor is malty and balanced, with a slightly sticky mouthfeel.

We've been searching for a winter seasonal beer that can truly reflect the influences of the Hispanic foods we love. Since it's getting colder, we thought of trying to make a beer that tasted like a champurrado - or Mexican hot chocolate - minus the hot part. Champurrado is more than just hot chocolate. It is often accompanied by canelo (cinnamon), allspice, cayenne, and even masa harina. We decided to break it down into separate ingredients and came up with a mix of HEXX chocolate, canelo, allspice, and for a twist, we're adding a few pounds of dried New Mexican sourced pasilla chilies (we're freaks about a good molé) and barley as a substitute for the masa. We ended up with a chocolaty, spicy - but not hot - beer that we think you'll love.

Odin's Tipple was meant to be a strong beer, but we changed our minds...its still strong but we wont follow the mega strong trend. It should be possible to make great beer without the extreme alcohol potency. Odins Tipple is now approx 11% abv, it’s a dark almost black beer from lots and lots of chocolate malt. Its the malt that contributes the flavor...no added coffee or anything else, Its got a great body without being old engine oil and still very drinkable due to the wild yeast we use. This beer is made with a single strain of wild yeast and the recipe is dead simple.

For the first edition of the Stillwater Import Series I traveled to the village of Beerzel, located in the Antwerp province of Belgium. Here I teamed up with brewmaster Jef Goetelen to craft an authentic Belgian version of my liquid interpretation of the Spring season. A recipe originally contrived a few years prior as a collaboration brew with my good friend Paul Kretzer. The base is German barley & wheat, with a touch of Belgian aromatic; accented with grassy hops and an array of spring botanicals (heather, chamomile, lavender, & dandelion). Like a fresh meadow in spring.
