Collaboration with Chef Chris Cosentino. As San Francisco Chef Chris Cosentino began planning his next Bay Area restaurant, he decided early on that a house cider would be a part of the menu. He reached out to Virtue Cider, not just to blend and bottle it, but to make the chef a part of the cider making experience. Chef Cosentino spent two days on the farm in Fennville, MI component tasting, wandering orchards, perfecting a Spanish sidra bottle pour, and pairing candidate blends while dining in Southwest Michigan. The resulting cider is a full-bodied blend of bittersweet and bittersharp apple varieties, offering aromas of overripe apple and the orchard, and a dry, crisp, citrusy flavor, supported by hearty tannins.
