A blend of Australian, American and German ingredients collides together in our cloudy, unfiltered lager for a perfectly fruity and refreshing take on a worldwide classic style. Restriced sulphur notes from an old-world yeast strain combines with the spicy and fruity hops from Germany and the US for a flavour sensation not often found in today's lagers. A slightly fuller body and depth of flavour from a proportion of Australian malt sets Perfect Storm Lager apart from the commercial lagers, while remaining a very sessionable beer.

Perle Ai Porci

Inspired by the Nordic tradition, it is a dark coloured stout. During the brew we added fresh oyster with their shell. They were the rare Fin de Claire N2 from Brittany's coast, to be precise (15 kilos of oysters for 500 litres of gyle). Its aroma has beautyful roasted, slightly savoury and mineral notes given by the shell. It has a creamy and full-bodied mouthfeel, with a pleasant, not too strong salty ending.

Apples make cider and pears make perry, although in Australia you’ll quite often see perries labelled as “pear ciders.” We’ve decided to stick with the more traditional English name for our perry. Pears are naturally high in a sugar alcohol, sorbitol, that does not ferment out so perries are always sweeter and creamier and lower in alcohol than ciders. The current batch is made from 90% beurre bosc pears, giving this perry a great texture, with 10% golden delicious apple blended in to add a spicy, apple pie flavour. Most commercial perries are made with pear flavouring, giving a distinctive pear drop / ginger character, so if you haven’t tried a real perry before we think you’ll be surprised how good they are.
