This Czech style originated in Pilsen, becoming a textbook definition of local brewing. Local noble hops (i.e. Saaz) were harvested, local pilsner grains malted, and the soft water profile of the area augmented the other ingredients. Brewers utilized the cool cavernous landscape as a lagering method. The popularity of the pilsner style swept across the European landscape. It wasn't until the repeal of Prohibition that a blander variation of the pilsner took hold of the American beer market. The Bohemian pilsner is a style that we traced back to its roots in order to replicate.
