Originally produced in an era without the benefits of modern refrigeration, a hybrid style of lager emerged that was fermented at temperatures typically reserved for ale yeasts. The end result was a medium-bodied beer with a lager-clean malt character and a subtle fruitiness derived from its time at these warmer fermentation temperatures. Pinsetter is brewed using the finest American 2-row and caramel malts, with a touch of roasted malt for a rich amber color. Pinstripe Stout is a roasty, vanilla, chocolate, coffee stout that is big and rich, but not over the top in its intensity and strength. Designed for the stout lover to drink all round it is also a great beverage for the casual stout drinker in the winter months. The sweetness of the vanilla helps to pull out the chocolate making it a dessert all in itself thought it goes great in an ice cream float. Look to enjoy this wonderful beer as the weather gets cold. Pinstripe pours jet black with a thick tan head. The dark chocolate aroma hits your nose first, followed up with a coffee ground taste that brings in richness and a touch of bitterness. It's flavor follows along the same lines. The coffee taste is discovered first, with the vanilla following on second to add a sweet taste. The sweetness of the vanilla mixes well with the dark and milk chocolate flavors. At the back of the mouth, the warming, rich alcohol taste is leaves a lasting impression. The aftertaste is mostly coffee and vanilla notes. Pinstripe plays to the sweet side of the palate, but keeps a whole mouth taste with the roastiness and bitterness of the coffee flavors.

Pioneer II - Po-Cha-Na-Quar-Hip Braggot

Our newest Pioneer Series release is a Braggot, a mead-ale hybrid dating back to the Middle Ages. We brewed it in collaboration with the local Magnolia Meadery, Enchanted Manor, who supplies mead to the Texas Renaissance Festival every year. Our Braggot uses American two row malt, a sprinkle of honey malt, and 1,200 lbs of raw, unfiltered, unpasteurized Texas wildflower honey sourced from Montgomery and Brazoria Counties; and of course whole cone American hops. This beer is named after a Texas Comanche War Chief: Po-Cha-Na-Quar-Hip. Tasting notes: bright orange with a honey scented white head; robust wildflower honey flavor, followed by clean hop bitterness, finishing with strong alcohol warmth. This brew has quite a kick, thanks to the bees.

Pioneer III - Brewmaster Degen

Pioneer III is another SMaSH, Single Malt and Single Hop, Ale. This time we chose a hop that has been around for a long time, but for some reason has gone unused, nearly disappearing from the brewing world. It was bred around the same time period as the revolutionary Cascade hop, but never received any recognition for kick starting the American Craft Beer Revolution like Cascade has. For shame, this is a very tasty hop. This beer is named after Texas's first recorded brewmaster: Charles Degen.
