Who doesn't love a sock monkey? Our mascot, Citra Rose, is... well... pink. We brew this beer with a bunch of wheat malt and add 120 gallons of real raspberry juice to make it fruity, delicious, and... well... pink!

This is a light bodied mildly hoppy ale brewed with a 2-row malted barley, Crystal, and a special Vienna malted barley. Golding and Cascade hops are used to provide the balanced palate for this fine session beer. 4.2% ABV

Many of you are familiar with our Moose & Squirrel Russian Imperial Stout– a strong and chewy dark beer comprised of several rich malts and layers of fruitiness, chocolate, and coffee. This is that, but aged in Pinot Noir wine barrels for over a year to achieve more complexity, as well as some mild oak and Pinot flavors. It makes for the perfect night-cap drink!

Our Global Kolsch refermented with 10% Pinot Noir juice extracted from the skins using the saignee method traditional to making Rose. Fruity grape notes, crisp Kolsch character, and an oaky mouthfeel make this a unique beer. Thanks to Holdrdge Wines for the juice!

Pinstripe Stout is a roasty, vanilla, chocolate, coffee stout that is big and rich, but not over the top in its intensity and strength. Designed for the stout lover to drink all round it is also a great beverage for the casual stout drinker in the winter months. The sweetness of the vanilla helps to pull out the chocolate making it a dessert all in itself thought it goes great in an ice cream float. Look to enjoy this wonderful beer as the weather gets cold. Pinstripe pours jet black with a thick tan head. The dark chocolate aroma hits your nose first, followed up with a coffee ground taste that brings in richness and a touch of bitterness. It's flavor follows along the same lines. The coffee taste is discovered first, with the vanilla following on second to add a sweet taste. The sweetness of the vanilla mixes well with the dark and milk chocolate flavors. At the back of the mouth, the warming, rich alcohol taste is leaves a lasting impression. The aftertaste is mostly coffee and vanilla notes. Pinstripe plays to the sweet side of the palate, but keeps a whole mouth taste with the roastiness and bitterness of the coffee flavors.

Pioneer III is another SMaSH, Single Malt and Single Hop, Ale. This time we chose a hop that has been around for a long time, but for some reason has gone unused, nearly disappearing from the brewing world. It was bred around the same time period as the revolutionary Cascade hop, but never received any recognition for kick starting the American Craft Beer Revolution like Cascade has. For shame, this is a very tasty hop. This beer is named after Texas's first recorded brewmaster: Charles Degen.

Pioneer Red is a smooth red ale with hints of spice in it. We use clover, cinnamon and a variety of malt to get a unique and delicious flavor in this beer. Pioneer Red usually runs XXX% ABV. This beer is inspired by the Great Chicago Fire of 1871. The fire wiped out most of the breweries at the time, devastating the industry. Pioneer was the name of the first fire fighting company in Chicago, established in 1835.

Gold Medal Winner of the Great American Beer Festival. Our beer is fairly dark in color, but don't be afraid. It is a perfect example that dark beers are not always strong beers. The body is surprisingly mellow, and the alcohol content is a bit lower than most people might think. It has a wonderfully clean and roasty aroma. Hop bitterness levels are kept in line, but it has a noticeable hop flavor.

This Winter Warmer is an Old Ale, brewed with loads of Caramel Malt, Chocolate Malt, and various other sweet roasted malts and raisins.
