Pineapple Express

Tropical fruit salad hop aromas burst from the glass, followed by a luscious sweet malt flavor on the tongue. An outrageous quantity of hops was used in this ale, predominantly of the Liberty variety. Dry hopped with Citra. No pineapples were harmed during the production of this beer. And yes, it is that strong.

Pineapple Express IPA

Pineapple Express IPA is a great combination of an IPA and tropical fruits. This IPA was brewed with light caramel malts and Munich malts, with hops varieties that compliment the tropical fruits (Summer, Citra, and Simcoe providing citrus, apricot, and melon characteristics). We then added a generous portion of pineapple, mango, guava, papaya, and peach puree/juice (all natural). These tropical fruits come through slightly, mostly pineapple, in the nose and flavor, blending very well with the fruity hops of this IPA.

The "grisette" style, practically disappeared, is restored to the taste of the day by several North American breweries. Derived from the season, which was a beer of farming tradition, grisettes were created by Belgian breweries to meet the thirst of mining workers. Pale, dry, and low in alcohol, the primary goal was to create a refreshing, easy-to-approach beer. This freely inspired version is meant to be digestible, but it presents an extra complexity due to the use of a variety of local cereals and the use of wild yeasts (Brett Drei). It was created and produced in collaboration with our friends Kevin Dwyer and Will Meyers of the Cambridge brewing company of Boston, a pioneer in the field of American wild ales. To be tasted when leaving the mine between 10 and 12 degrees Celsius.

Pink Peppercorn Saison

This seemingly simple Saison uses the additions of wheat malt and Belgian yeast to be smooth yet crisp on the palate but the simplicity then takes off on a flavor bursting ride when the brewers throw in the addition of pink peppercorns, coriander and orange peel which complement the Belgian yeast spiciness along with add a slightly sweet finish with notes of citrus and red berries. This one is perfect and what we call the 102 degree day beer.
