Pitter Patter

Patersbier is typically a lower alcohol beer that Belgian monks drink during lunch or lent so that they can keep working and praying all day long. We use Belgian malts to create a bready, toasty malt profile with hints of dark fruit, caramel and toffee flavors. Traditional Belgian yeast rounds out the flavor profile with some fruit ester notes. Pivo Baltic Porter

A smooth medium-full bodied dark lager with a complex malty sweetness with a prominent roasty flavor and hints of dried dark fruit. Mouth-filling and smooth with a clean lager character and warming alcohol. Finishes slightly dry with hints of coffee and crème brûlée. Baltic Porters are a very distant cousin to the original London porter. Like India Pale Ales, they originated as stronger versions of Porter brewed to withstand a long voyage east. When brewers in Poland and other Baltic states began brewing this style it was re-interpreted as a lager. Baltic porters are quite rich and strong and often made with lager yeast rather than the traditional ale variety.

Second of three beers released in celebration of our First Anniversary, Placebo Pils underwent cutting-edge experimentation with a variety of hopping techniques to disseminate a total of seven different hop varietals amid this amped up pilsner (Cascade, Centennial, Citra, Galena, Palisade, Opal, and Saphir). For irritating symptom relief, mash hopping was prescribed to add a citrusy, piney, and spicy character; hop bursting with late addition hops was dispensed throughout the elixir to enhance its IBU’s; and dry hopping during the cold lagering process was administered to accentuate the aromatic hop bouquet. The trio of these unusual techniques were precisely orchestrated to alleviate and sustain the cure you so desire. Ergo the placebo effect becomes a pervasive phenomenon.

Plank II

To make Plank II, six-foot planks of yellow poplar and eucalyptus woods were placed in the fermenter and the base beer—a velvety doppelbock—was allowed to age with these planks for six weeks. The eucalyptus wood lends notes of chocolate, balanced with a hint of toffee and smoky dryness from the yellow poplar. Months of taste-testing determined Plank II's beer style and the types of wood used in the brewing process. The final product is the brainchild of Heavy Seas brewers, firkinmeister Steve Marsh, wood expert John Gasparine, and MD Homebrewers' Guild President Les White. Plank II is the second edition in our Plank series, which was established to feature a unique wood aging treatment pioneered by Heavy Seas and wood expert John Gasparine. In this process, we “deconstruct the barrel,” putting the wood in the beer; this process adds flavor differently than barrel-aging or adding toasted wood does. The wood we mature the beer on has been retified. This revolutionary thermal process was adapted from the construction industry by wood expert John Gasparine, and it can transform mundane species of wood into flavor powerhouses. We brew and release Plank beers periodically.
