Bottle conditioned for an effervescent carbonation level and added complexity of flavor.

Saison du Sept Mers

Saison du Sept Mers (Saison 'of 7 Seas') is brewed to emulate the classic and very traditional style of Belgian and French Farmhouse Ales. We employ an authentic French Saison yeast strain that imparts a distinctly spicy, rustic, slightly "wild" character. The beer features Washington State grown malted White Wheat, Canadian Rye malt, and conventional malted barley which combine to create a refreshingly dry, bready, and slightly peppery malt flavor profile. Lightly hopped with a rare hop variety called 'Sorachi Ace', a woodsy, lemony note is present in the aroma. Saison du Sept Mers is refreshing, complex, and full of subtle rustic charm and nuance.

Brewing and tweaking five gallon test batches on the antiquated propane rig our brewery uses for weekend crawfish boils for inspiration, our brewmaster Gar Hatcher has crafted a biere to complement the spicy epitome of Cajun cuisine. Saison D’Écrevisses (Crawfish Season) is a Belgian-style Saison spiked with a generous amount of rye malt and then fermented with a distinctive Belgian yeast that gives this beer its dry and peppery finish. Finished with imported French Aramis hops, Saison D’Écrevisses has 24 IBUs and is 6% ABV. Our Saison D’Écrevisses is available in 22 oz. Belgian-style bottles and on draft only during Louisiana’s traditional crawfish season (January to May).

This workers strength Saison is our seasonal beer. The base recipe will remain the same and will uses the same strains of yeast as our ‘Provision’ Saison but changes to reflect the seasons in the inspirational countryside that surrounds Burning Sky Brewery. The Autumn hedgerows have been laden with rosehips this year & we have blended a large portion in to give a subtle perfume & enticing colour to the beer.

Saison Locale No. 13

Saisons are a traditional Belgian farmhouse ale brewed with a combination of herbs and spices that the farmers currently had on hand. They are intended to be crisp and thirst-quenching for the farmhands. Notes of citrus and clove spice are prominent. We keep with this tradition and change up the fruits and spices we use for each beer in the series. For batch no. 13, we used lemongrass, pink peppercorn and galangal root. Saison no. 4 earned us our first medal - it took home Silver at the 2014 Colorado State Fair!
