Scotch Ale

The Scottish were some of the first in the UK to brew lager beers. Prior to this, they brewed ales at lower than normal temperatures with small amounts of dark malts. The Scotch Ale is a higher strength version of this type of ale with clean malt aromas and flavors and a touch of crystal malt. Malt sweetness dominates the beer’s flavor.

Scotland has a long tradition of brewing malty ales, as they were often at war with their hop-growing neighbor, England, making hops difficult to obtain. The term “Scotch” denotes a beer of higher alcohol in Scotland, as opposed to the term “Scottish” which is of a similar style, but lower in alcohol. Our Scotch ale is brewed with molasses and a light addition of smoked malt to provide a balanced, malty sweet nose and a refreshing, smooth taste with a slight alcohol warming finish.

Scotch on Scotch

Stylistically speaking, Scotch on Scotch is an Imperial Scotch Ale aged on Scotch barrel chips. A massive malt presence is created by layering caramel and amber malts with just a touch of peat smoked malt for additional complexity. Brief resting on oak chips following primary fermentation allows Scotch On Scotch to coax rich woody, char and vanilla notes along with the essence of Scotch whisky into a hearty, warming beer, 
a liquid fireplace of sorts. Hopping with Magnum, Chinook and Northern Brewer hops contributes a spicy earthiness 
to Scotch On Scotch. Pouring deep chestnut brown, Scotch on Scotch opens with aromas of fig and raisin punctuated by subtle oak and whisky character. A combination of caramel malts is accented by an addition of dark brown sugar during the boil resulting in suggestions of toffee and molasses and a slightly sticky mouthfeel. Aging on Scotch whisky barrel chips lends complexity and structure to Scotch on Scotch as it tapers to a rich, lingering finish featuring spicy/earthy notes provided by Northern Brewer hops.

This traditional Scottish ale gained its unique name during the 1800's when it was referred to the price of ale per barrel. The Scottish 70 is our lightest beer at Blue Stallion Brewing Co and would have cost 70 shillings back in the mid 19th century, hence the name “70 Shilling”. We only use a small amount of British hops in this beer, so it has a distinct malty sweetness as well as a slight caramel taste. This particular beer has a deep amber color and gives off a light and fruity aroma. This beer is fermented at slightly cooler temperatures to simulate the typical Scottish brewing techniques.
