Still Life With Peaches Saison

This is the story of a brewer who walks into the National Gallery of Art while in Washington D.C. for SAVOR to gain inspirational ideas for new beers to brew. As he admires the bountiful works of art, he settles into a calming bliss that leads effortlessly into a trance-like state of utter tranquility. His mind expands as he strolls and peruses the masterpieces before him. In time, he is lured to a painting that quietly yet assuredly speaks to him and, posthaste, he becomes infatuated with its display of simplicity coexisting with great detail. What better artist to settle on but one whose vision evoked the same response from great masters such as Matisse and Picasso, who remarked that Paul Cézanne “is the father of us all”. Still life artwork was prevalent in this French Post-Impressionist painter’s repertoire. The result of this inspiration is a Saison that blends a classic Saison DuPont yeast with yellow peaches added during fermentation. Hallertau hops give this full-bodied Oktoberfest Lager its spicy yet tempered aroma. It pours a gorgeous dark amber, reddish colour (reminiscent of the flesh of black plums), topped off with a nice ivory-coloured foam. The aromatics are of dark fruit at the front (plums and dark cherries) with hints of hazelnut and almonds shining through. A touch of port accented with nutmeg round out the nose. The body is warm and inviting with caramel, toffee, hints of chocolate, and baked plums. The finish is slightly dry and very smooth. A formidable match for any occasion.

Stochasticity Project: Grainiac

This deep, amber ale beauty was created to shine a light on rare, unexplored grains seldom used in the brewing world. In addition to barley, wheat, rye and triticale, we’ve added malted buckwheat and three types of malted millet to bring the total unique grain count to seven. The earthy, nutty notes of granola found in this experimental, multigrain malt bomb are complemented by the citrusy, floral flavors of four classic American hops. By dry-hopping the Cascade and Centennial hops at the end, we were able to up the hop factor and round out the grain bill’s rich, bready, roasty character.
