The Governor

Named after several early governors who promoted the advancement of beer brewing in the early colony of Sydney. From Governor Bligh and the infamous mutiny off HMS Bounty and his controversial resignation as the NSW Governor after the Rum Rebellion, to Governor Phillip King who was prompted by Lord Hobart to import brewing materials to try and stem the rum currency in the early colony. Even before the first Governors could restrict the future drinking culture of the young colony, Captain Cook was already brewing beer on his way to the new country on board the Endeavour in 1770. Beer was always destined to be the drink of choice for the Australian people.

The Great Beyond

“Double IPA is a style we were excited to brew – it’s a further exploration beyond the Belgian-styles we are known for historically,” said Phil Leinhart, Brewmaster for Brewery Ommegang. “Nirvana received such a great reaction, of course we wanted to see if we could take that to another level. And I’m really excited we are sharing this beer nationally – unlike Nirvana which we restrict to our heartland, fans everywhere can enjoy Great Beyond and tell us what they think.” Great Beyond pours a hazy light copper color with a thick white head. The aroma is intensely fruity thanks to massive hop editions; notes of mango, pineapple, and apricot dominate the nose, with underlying hints of sweet citrus. The flavor is full of juicy, fruity hop character with resinous pine undertones. The body is pleasantly full with a silky mouthfeel and big balanced bitterness. The finish lingers, finally resolving to a pleasant hop presence. Great Beyond is 8.8% ABV and 83 IBUs, a true palate-wrecker.

The Great Pumpkin Ale

The Great Pumpkin has indeed finally arrived. We brewed one batch of Pumpkin Ale to celebrate the fall harvest season and we used almost 400 lbs of fresh, local, organic pumpkins from a Riverview Farms. We carved, baked and scooped pumpkin (for a really long time) and added them directly into the mash. Several “pumpkin pie” spices were added in the kettle. Enjoy.

The Gruesome Twosome

The stars of our canning line are Dave and Matt, two dedicated dudes who lovingly coax our beer into the 12oz vessels you find around town. They're dedicated not only to our beer, but apparently each other, since they work the same hours all the time. It's so common to see those two busting it out in the back of the brewery that Bill, our Packaging Manager, has dubbed them "The Gruesome Twosome." The Hangman

Hangings were frequent in the early days of Sydney Town. The first gaol on George Street, now the Four Seasons Hotel, was the site of hundreds of hangings. The hill above (where Harts Pub is situated) was referred to as Gallows Hill, where locals would gather to watch the hangman work. Alexander Green, a convict in his own right, was appointed to the position of public executioner in 1828 and during 27 years hung over 490 people, including 6 women. He was instantly recognisable, having a livid scar down the side of his face – the result of an axe attack by a prisoner. In early May 1855 he was committed to a lunatic asylum for the remainder of his life.

The Heart of Darkness

Meadmaker Ken Schramm crafted the Heart of Darkness exclusively from his home grown fruit. This mead represents a true labor of love. Hand-picked and hand-pitted morello cherries were fermented with black currants, red raspberries and Michigan honey from Larry Yates’ Sawmill Lake Apiaries. Virtually all of a season’s fruit production was used in this inaugural batch, limiting its production to a small number of individually signed and numbered bottles. The Heart of Darkness was free run, unfined and unfiltered, yielding a deep, intense character. It pairs beautifully with grilled meats, bleu cheese, and dark chocolate. 2009 vintage - 110 bottles 2011 vintage - 140 bottles
