The Heiress is our take on a classic Bohemian pilsner. Refreshing and effervescent with a snow-white head, its earthy and floral with a clean, bitter finish. It’s the perfect beer for fans of traditional pilsners…and for converting people whose only reference-point for pilsners are the adjunct versions sold 24 to a box. Due to high-demand from our brew-crew, The Heiress is almost always on-tap in our tasting room.

The Highbinder derives the bulk of its fruity front-end flavors from raspberries, while gaining much of its complexity and tannic back-end character from the wine barrels in which it is aged. Subtle yet refined, balanced and drinkable, this corrupt politico makes an art of winning over the masses. The Highbinder is currently available in 500-milliliter bottles, exclusively in our tasting room while supplies last.

Like busy bees working hard to please their queen, this copper ale will take your palate for a spin. This brew is loaded up with our favorite American hops and complimented by a touch of raw honey procured from a local hive. Using a small amount of specialty malt and nearly every method of hopping possible, we present to you this delicious seasonal.

A strong Imperial Pils, with flavors as smooth and crafty as Gollum himself. Like the ring which Gollum pursued for the rest of his life, his “precious” pils, if your quest leads you to it, could extend your life too! (at least we’d like to think so) It will, at a minimum, make your journey a little more enjoyable!

Light and crisp, this beer is perfect for people who are seeking a more traditional lighter option.

An American Amber Ale brewed with Crystal, Honey and Brown Malts. Both bitter and aroma hop additions compliment the slightly malty body. We finish this beer with local fall and buckwheat honey from Waid’s Apiaries (Interlaken, NY) to add a slightly sweet flavor.

The Hoppy Homunculus The Hoppy Homunculus (6.3% ABV, 55 IBUs) is a medium-bodied American IPA. Originally conceived as a test batch to experiment with new hop varieties, this beer became a favorite among the brewery staff. After several revisions, our brewers perfected the hop blend which includes Centennial, Cascade, and Citra hops. The Hoppy Homunculus boasts an assertive aroma of tangerine and grapefruit, with a slight minty finish. The citrusy hop flavor blends flawlessly with a subtle caramel sweetness, producing a well-balanced, drinkable IPA. The Hoppy Homunculus pairs well with spicy Asian foods and the beautiful Maine summer.

Don't fight it, Spite It! The Hot Dog Meets the Bush is a collaboration between Spiteful and Denali Brewing Company out of Talkeetna, Alaska. We worked together to create a beer with ingredients unique to each brewery's home. For us, here in Chicago, mustard seeds seemed an obvious choice given the city's obsession with the Chicago hot dog. To complement that, Denali brought Alaskan Blueberries with them. Together our ingredients blend for a refreshing Saison.

IPA with sage and orange

A winter warmer fermented on late harvest apples with rye barrels and caramelized sugars. A nice compliment to a dark winter night.

The Hussar is inspired by our Polish ancestor who fought in the battle of Vienna alongside king Jan Sobieski. Dressed in suits of armor with giant metallic 'wings', hussars struck fear in their opponents and were widely known to be part of the most deadly calvary on the European continent at the time. In his honor we brew this golden, oak smoked wheat ale with a floral hop bitterness and noble aroma from Polish hop varieties.

Imperial Dark Saison brewed with smoked black tea and peppercorns.

Reminiscent of the German style Kölsch with its pale straw/gold color. This blonde ale is an easy drinking beer because of its light malty palate, medium bitterness, and dry finish. You will pick up nice earthy characteristics from the noble hops. Overall, it’s just a nice balanced beer—light bodied, and refreshing.

A sessionable India Pale Ale brewed with unmalted rye; the spicy malt bill supports an array of intense hop aromatics, all engendered by a classic Pacific Northwest hop bill; brewed with Cascade, Simcoe & Amarillo hops, then heavily dry-hopped with Simcoe & Amarillo.

We have taken two renowned American hops and paired them to create a fresh take on the American India Pale Ale: Cascade and Centennial. Both hops are continuously added throughout the boil bring a balanced hop profile that is combined with a smooth malt background. This beer is hoppy enough for the hophead, yet refined enough for the casual drinker.

The Brew 1 – March – “The Iron Tankard” Old Stock Ale – The building started as a YMCA in 1889 and had a huge iron swimming pool in the basement. From Spike: Iron Tankard “Old Stock Ale” is the first of four beers in Terrapin’s Georgia Theatre Sessions. It is brewed with a generous portion of crystal malts for a full body and is lightly hopped. This malt forward beer has flavors of dark dried fruit, mellow alcoholic warmth and is unfiltered for your listening pleasure. A portion of the proceeds will be donated to the Georgia Historic Trust for Historic Preservation Fund to rebuild the Georgia Theatre. To make things even more interesting, there is one Golden Ticket hidden among each of the Georgia Theatre Sessions brews. This means that four lucky winners will receive a lifetime pass to the new Theatre.

IPA brewed with Southern Hemisphere-hops. Nelson Sauvin, Pacific Jade, Southern Cross, Summer, and Rakau hops. Unfortunately, due to the unavailability of hops used in this beer, it has no current plans for re-release.
