The Butcher

George Cribb was a butcher from The Rocks, a bigamist and one shifty character. He was also one of the biggest producers of sly grog in The Rocks. When he arrived in Australia, he tied the knot with a female convict, even though he was already married. He later found out his wife from England was coming to Australia and subsequently paid his second wife £300 (about $150,000 today) to disappear. He was caught up in several dishonest dealings, including an incident with smuggled rum barrels found on his cart, but always managed to talk his way out of trouble. The Butcher did a great trade with both businesses and he bought up large amounts of property in The Rocks and built rows of tenements on them.

The Carpenter’s Mikan Ale

The lively citrus aroma and flavor comes from the addition of fine Japanese mikan fruit. The mikans we use come from the land of our friend and partner, the Carpenter Nagakura-san, who picks them by hand. Our fruit ale is inspired by the rich tradition of craftsmanship in Japan – the “Shokunin” spirit – which is embodied in the Carpenter.

The Caucasian

White Russian Imperial Stout, inspired by "The Big Lebowski's" beverage of choice, White Russian (aka Caucasian). The Dude: "Another Caucasian, Gary". An optical illusion - all the aroma and flavors you'd expect from a big bold Stout –with a golden appearance (brewed exclusively with light-colored malts) and with coffee added to achieve the stout-like roasty undertones in the finished beer. Also brewed with Lactose to completely balance out the 75 IBU of bitterness and retain some sweetness. Finally, aged on vanilla beans and American oak.

The Chairman

The Chairman is an Imperial Red Ale created to remember the men and women who worked on Lumpen magazine and became Chairmen of the Boring Theoretical Party (BTP) The Boring Theoretical Party began in the 1990s. It was Lumpen magazine’s response to the boring, and uh, theoretically inclined armchair lefties. We started a “Worker’s Newspaper” edited by Chairman Thar, our beloved leader. Our symbols were the Armadillo and the Hoe. We had a theme song, a salute (raised fist while yawning), and we promoted that everyone should be the Chairman of their own Party.

The Companion

For the past four years, Garrett has been working on a massive project. It’s the ultimate beer collaboration, but it’s not a beer. Published this September by Oxford University Press, it’s The Oxford Companion to Beer, the most comprehensive book on beer ever published, featuring 160 experts covering more than 1,100 subjects. It’s a momentous thing, so Garrett (Editor-in-Chief), Horst Dornbusch (Associate Editor, writer, scholar, man-about-town) and Thomas Kraus Weyermann (writer and master maltster) hatched a plan. Together, they brewed our next Brewmaster’s Reserve beer, called The Companion. Thomas created special new floor malts for The Companion, which is brewed in an old style called “wheat wine”, a wheat-based equivalent to barley wine. The floor malts give this beer a juicy malt character of considerable depth, 55% malted wheat gives it a surprising lightness on the palate, while our house ale yeast lends a gentle fruitiness. The Oxford Companion to Beer will impart knowledge, while The Companion imparts conviviality. Maybe you really can have it all?
