The Kimmie, The Yink and the Holy Gose Ale

With a bright, golden color and tight creamy head, the earthy wood undertones in our Gose develop into a light mineral aroma with a hint of lemon zest and tropical fruit. Before boiling, the wort is kettle soured with lactobacillus, imparting an initial refreshing tartness that gives way to a subtle fullness. Flavors of guava and peach are followed by a slight sea salt dryness and lemon sourness that is enhanced by coriander and post-fermentation additions of salt. The finish is dry, effervescent, and lemon tangy, reminiscent of a fresh sea breeze.

The Last Polka

This beer is a collaboration between FCB and Black Bottle Brewery. This inspiration for this beer was to create an easy drinking wheat beer that blends American and German wheat beer styles. German crystal malts were blended with domestic wheat and base malt creating a simple but hearty malt backbone. We then used American Columbus hops for bittering and German Hull Melon hops late in the boil and in the dry hop. The combination of the citrusy and dank Columbus hops, and the notes of strawberry and melon from the Hull Melon, create a uniquely hopped but approachable wheat ale.

Accentuated with tropical tones of apricot, citrus, and mango the alcohol is very well hidden giving way to a clean and crisp finish. The Liberator

Liberator was made as a 30th birthday gift to Joe Short. As a double IPA, this beast employs a sizable malt bill, but it is the crazy amount of hops added to the boil every 4 minutes, for 120 minutes, that really make this beer special. Fruity, floral, and piney hop flavors penetrate throughout the caramelized malt profile. Liberator is a well-balanced, full bodied brew that has a bitter finish due to the post fermentation addition of lemon and orange zest. The original batch brewed on the Bellaire system had 42lbs of hops in it, compared to Huma, which has around 20lbs of hops per batch. Today’s Elk Rapids batches have up to 138lbs of hops. The name, Liberator, came from Joe’s name for the Short’s employees who carry out our company’s mission statement as “Beer Liberators”, freeing the masses from their misconceptions surrounding beer.
