Tom Paine Ale is brewed to commemorate the bicentenary of Thomas Paine's "The Rights of Man". It is thought that Paine helped to draft the American Declaration Of Independence. The beer is brewed to the Standard Excise Gravity of 1055° in honour of the eponymous political radical who was an Excise Officer in Lewes between 1768 - 1774. Tasting notes: A dry hopped, robust pale ale with a full, malty palate and a bitterness to match.

Inspired by Head Brewer, Bill Wamby’s award winning saison (farmhouse ale) recipe, Tongue Tied Cherry Saison (6.2 percent alcohol-by-volume) is a traditional Belgian-style saison ale brewed with over a thousand pounds of both tart and sweet Michigan cherries. An unfiltered, slightly creamy ale with a pale reddish amber color and nice luscious white head. The distinctiveness of unmalted wheat is enhanced by the addition of lemon, orange peel and coriander, which provides herbal spiciness to this refreshing, pure Michigan summer ale. Slightly fruity and very refreshing, with a subtle tartness and tremendous drinkability.

Tonnellerie Rue

Tonnellerie Rue is a special variation of our rye saison that has been 100% fermented in oak barrels. Using this more traditional storage technique during the fermentation process adds further complexity to an already complex beer by allowing the natural yeast and bacteria, still nestled within the porous oak from previous fermentations, to eat away at the wort’s sugars while it slowly evolves into delicious beer. The final product is dry and earthy with a slight sour tinge, light rye spice and earthy funk. Our Tonnellerie Series of beers are experiments with barrel fermentation. Look out for others!
