The name Vigneronne Cantillon was given in 1987. This name reminds us that, while it belongs to the beer patrimony, the spontaneous fermentation, the ageing in the barrels for several years and the addition of grapes make it a distant cousin of certain white wines. In spite of its success, the Vigneronne represents less than 5% of the total production of the Cantillon brewery. In order to obtain grapes which are as mature as possible, we buy them at the end of the season. Every year, 1000 kilos of white italian grapes are delivered at the Cantillon brewery in the beginning of October.

Viking IPA

This beer makes a huge flavour- impact without being a heavy brew. Despite the wall of tropical fruit aromas you need to head-but your way through to take a sip, the mouthful is medium bodied and refreshing. The bitterness is bitey with a medium-high carbonation emphasising the piquancy. However, the resiny character to the hops and the subtle caramel malt takes the edge off the bitter. The 6% alcohol content is barely detectable with only the slightest boozy-prickle. The perfect sessional beer.

Vin de Saison

As the trend in the US for barreled beers steadily grows we have been hard at work getting our very own barrel program up and running. We started with the Vannie Hout and have moved forward with the Vin de Saison, Devil’s Peak Brewing Company’s very own wine and beer hybrid. What is a wine and beer hybrid? It’s rather an open category, but essentially it translates to grape must (juice) or even whole grapes being incorporated during the brewing process. Some add it to the mash others add it to the boil and some even combine it directly to the cooled wort prior to fermentation. For our regular Vin de Saison we added 20% Swartland Chenin blanc aquired from Mullineux Family wines. We opted for this grape variety as it’s the most widely grown wine grape variety in South Africa and increasingly becoming a force to be reckoned with internationally. In addition to our regular Vin de Saison, this year we mixed things up a bit by allowing one barrel to ferment naturally/wild without the addition of our regular Saison yeast, rather relying on yeast present on the grapes and within the barrel. So what does a wine beer hybrid taste like? Well it’s fundamentally a beer with a super fresh aroma and a lovely crisp grape derived acidity. Typically I like to describe these beers as the Champagne of the beer world. We used low hops on this one in order to allow the malted wheat characteristics to come through. Now, many years later, we are excited to present this collaboration between friends that represents our Sour Program full circle. VinoSynth Red is a blend of 50% Sour Reserve and 50% Malefactor Flanders-style Red Ale aged on Catawba grapes. Catawba is a native North American variety, known for making jams and jellies, and distinctly juice, fruity, exotic wines. Malefactor was blended with Sour Reserve to develop more body, mild bourbon barrel character, and a layered acidity to complement the Catawba’s innate sweet, fruity notes.

VinoSynth White is 100% Sour Reserve aged on locally grown Vidal Blanc grapes. Vidal Blanc is a French varietal with hints of tropical fruit flavor, commonly utilized to develop ice wines. Our Sour Reserve lends itself wonderfully to enveloping the acidity of the grape with notes of lactic acid, and allows the polite pineapple and grapefruit character of Vidal Blanc to shine on the palate.
