Zymaster No. 7 Portrero Hill Sour-Mash IPA

Anchor, already a pioneer in craft brewing, moved to San Francisco's Potrero Hill in the late 1970s. In 1993, we repurposed a small corner of our brewery and began distilling whiskey from a mash of 100% rye malt. We call it Old Potrero®. Although we've experimented with beer and hops in the distillery, we've never used rye or sour mash in the brewery—until now. This Zymaster, Potrero Hill Sour-Mash IPA, begins in our distillery, where we prepare a 100% rye malt mash just as we would for our rye whiskey. After transferring it to a small open fermenter, we pitch the yeast and wait. Five days later, we mash it in the brewhouse, using a blend of pale barley malt and rye malt. Then we add the sour mash from the distillery, which lowers the pH of our brewery mash. By introducing sour mash before the boil instead of after it, we are able to create tartness in this brew without sourness. In the brewkettle, we use four additions of Nelson Sauvin, a dual-purpose hop from New Zealand. We also dry-hop with Nelson, which creates Zymaster 7's unique tropical aroma. An English ale yeast contributes dry, clean flavors.

ZZ Hop

ZZ Hop triple IPA was brewed as a tribute to a true hop fanatic who is known in these parts as “The Hop Hunter”. The allusive bearded Sierra Hop Hunter can be found in the mountainous regions of Northern California. While not officially nocturnal, he prefers to hunt hops in low light conditions for extended periods of time. Triple the hop iSOBERization from three different forms of Chinook, Centennial and Amarillo hops. An intense floral and piney aroma with an explosion of hop flavor quickly turns to sharp bitterness followed by a brief encounter with malted barley. One sip will make your tongue feel like a hop oil spill has occurred just past your lips.

Aged for a year in Oregon pinot noir barrels, our dark Belgian-style ale develops complex flavors reminiscent of dried fruit, vanilla and sherry. We've taught an old brown new tricks. The brunette hue is derived from roasted Belgian aromatic malts, and fruity esters are augmented by lemon and orange zest. For a further twist, Brettanomyces induced secondary fermentation flecked with sour cherries, raisins, cranberries, figs, dates, and currants for a mildly acidic ale. Enjoy this gift now, or for even freakier, age it somewhere dark for the ultimate re-gift.

[BANISHED] Tough Love

Tough Love is bold but nuanced, an homage of sorts to the traditional Russian Imperial Stouts and the ruling style of Catherine the Great. We construct it with dark roasted malts, malted rye, and oak-smoked wheat, and then banish it in Kentucky bourbon barrels. The aging process smooths out the edges on an otherwise bold statement, and bitterness succumbs to tender strokes of vanilla beans, hints of dried cherries, and new layers revealing themselves with each sip.

Nut brown in color and lightly hopped with Willamette, this beer is dominated by a pleasing caramel finish that is darn close to heavenly. 5.2% ABV. The Almost Heaven Amber Ale is named after John Denver’s ode to West Virginia, “Country Roads”. The picture on the tap handle is the Mountain State Brewing logo.
