Cutting Tiles is an exploratory series of Double IPA's featuring a range of aromatic single hop varietals brewed with raw wildflower honey. This new version is dosed with 100% Citra in all kettle, whirlpool and two massive dry hop additions. The local wildflower honey keeps the body light and drinkable but provides a earthy backbone. Floral and zesty up front backed up with a nuanced citrus character on the nose that continues straight through in the flavor profile. Pillowy soft mouthfeel, with a restrained bitterness on the finish. New variants to follow!

Exit 2 takes us to the most rural parts of the state, full of farms, orchards and vineyards. To celebrate this, we’e used Jersey gown malt, hops and rosemary. This Double IPA features bug rosemary, pine and fruit hop aromatics from Chinook, Simcoe, Warrior and Mosaic. Hops and herbs are balanced by flavors of eight different malts, with notes of freshly baked bread and lightly kilned malt. A slight alcohol warmth rounds out this big, resinous Double IPA.

Farm's Edge: Moccasin Creek

Notes: Brewed in partnership with Moccasin Creek Vineyards (Zebulon, NC...30 minutes east of Raleigh). We brewed this saison with 31 gallons of muscadine grape juice, local wheat, and a literal wild assortment of yeast. The result is a slighty tart, musty, and "foxy" grape saison that, with its higher carbonation levels, is a wonderful complement to food (grilled chicken, fish, vegetables with lemon/vinegar). It's tasty on it's own, for sure...but this is a food-focused saison.

Géants’ Saison Voisin

La Brasserie des Géants began brewing Saison Voisin in 2001, although the recipe dates back to much earlier. The beer is a revival of a regional style brewed by Brasserie Voisin, a brewery built in 1876 that brewed for over 100 years, but sadly closed in 1989. Géants’ Saison Voisin is brewed according to the original 1884 recipe and under the guidance of retired brewer, Léon Voisin. He has proclaimed the new version an accurate reproduction of the original. Saison Voisin is amber-colored and, at 5% abv, extremely refreshing, with a light touch of bitterness and fruitiness. It is unfiltered and refermented in bottle.

As long as stocks last. This bottom-fermented Pils specialty is only available once a year, shortly after the hop harvest. It is naturally brewed and only clarified by the centrifuge. We brew this pile from freshly picked aroma pots of our own hop-garden right next to the brewery. Immediately after plucking, the hops come into the kettle. Unfiltered and with the typical Hopfenduft, this beer specialty of our brewery has already conquered the taste buds of many beer drinkers. It has an alcohol content of 5.0% and is therefore "slightly lighter" than our Pyrasian country beer, but hopy dry. Pyraser Hop Pils are available in well-stocked Beverage Stores and Pyraser Restaurants.
