Cutting Tiles is an exploratory series of Double IPA's featuring a range of aromatic single hop varietals brewed with raw wildflower honey. This new version is dosed with 100% Citra in all kettle, whirlpool and two massive dry hop additions. The local wildflower honey keeps the body light and drinkable but provides a earthy backbone. Floral and zesty up front backed up with a nuanced citrus character on the nose that continues straight through in the flavor profile. Pillowy soft mouthfeel, with a restrained bitterness on the finish. New variants to follow!

Roasted with malts from Colorado Malting Company. Colorado grown hops from the Western Slope and the oldest strain of brewer's yeast in the state. Aged in 3-year old whiskey barrels from Laws Whiskey House.

It’s summertime. Hop bines are growing up to 6 inches a day. Hibiscus is in full bloom. And in Crimson Pistil, the two get in a glorious tangle of berry-like tanginess, sunset technicolor and sticky tropical notes.

Our delicious 5% Pilsener that was donated to the brewery for the first time and had disappeared completely in the cheers of the loving beer enthusiasts within half an hour. Juicy New England style hazy IPA with Citra, Galaxy, and Nelson Sauvin hops.

Duel takes hops to the next level. With an interesting hop finish, this brew has a subtle floral & lightly spiced flavours with rich tropical fruit & citrus aromas. This brew has a full mouth feel, bright nose & a crisp finish. Brewed from Australian Pilsner malt and a touch of German Dextrin malt, this lager is refreshing in flavour, clean & crisp with an interesting hop combination of Summer, Ella and US Cascade & Citra. Duel is best served with a roast dinner, chicken & leafy greens. The hoppiness of this brew pairs perfectly with spicy food, pizza & light seafood.

Playful in the mouth, pleasant bubbles, lovely malty attack followed by a fruity and slightly bitter touch, again a hint of minerality, nice dry finish.

Exit 2 takes us to the most rural parts of the state, full of farms, orchards and vineyards. To celebrate this, we’e used Jersey gown malt, hops and rosemary. This Double IPA features bug rosemary, pine and fruit hop aromatics from Chinook, Simcoe, Warrior and Mosaic. Hops and herbs are balanced by flavors of eight different malts, with notes of freshly baked bread and lightly kilned malt. A slight alcohol warmth rounds out this big, resinous Double IPA.

Notes: Brewed in partnership with Moccasin Creek Vineyards (Zebulon, NC...30 minutes east of Raleigh). We brewed this saison with 31 gallons of muscadine grape juice, local wheat, and a literal wild assortment of yeast. The result is a slighty tart, musty, and "foxy" grape saison that, with its higher carbonation levels, is a wonderful complement to food (grilled chicken, fish, vegetables with lemon/vinegar). It's tasty on it's own, for sure...but this is a food-focused saison.

Citra and Ella hops impart a bright and tropical essence to this exceptionally thirst quenching and well-rounded Gluten-Free brew.

We used a high-attenuating, hearty German Bock yeast to ferment this beer slowly, allowing for a long, cold, conditioning period. The result is a deep, dark, rich, rewarding, mighty, malty, bock-style beer.

La Brasserie des Géants began brewing Saison Voisin in 2001, although the recipe dates back to much earlier. The beer is a revival of a regional style brewed by Brasserie Voisin, a brewery built in 1876 that brewed for over 100 years, but sadly closed in 1989. Géants’ Saison Voisin is brewed according to the original 1884 recipe and under the guidance of retired brewer, Léon Voisin. He has proclaimed the new version an accurate reproduction of the original. Saison Voisin is amber-colored and, at 5% abv, extremely refreshing, with a light touch of bitterness and fruitiness. It is unfiltered and refermented in bottle.

A high gravity New England style IPA featuring Citra, Simcoe, Centennial and Experimental 431 hop varieties. This quarterly release is the shade of a hazy sunset, and is the perfect pairing for any season in New England. The alcohol is substantial enough to warm you in the winter, the aromatics welcome spring with bright floral and fruit, in summer the hop flavors of citrus and melon are reminiscent of fruit salad, and in fall the malt backbone and bready accents complement the cool autumn breezes. Coming in at 8.5% ABV, this beer drinks deviously smooth while provoking the olfactory with a tropical bouquet of blood orange flesh, grapefruit rind and melon. 2 row pale malt and German pilsner malt create a canvas for the hops to shine while providing enough body for a great drinking experience. Here at Caboose we like to put our own spin on tradition so we threw in some cherry wood smoked malt and 6 other specialty malts to make this unique brew stand out.
