Dove Runner Red Wheat

Celebrating a free-spirited and scandalous time when “Soiled Doves” bathed on the banks of the Arkansas and Chisolm trail cattlemen raised a ruckus in Wichita’s Delano district, Dove Runner is made with over 50% red wheat and enough roasted barley to make the color. This beer proves that all dark beer isn’t heavy. It starts with a slight roasted flavor that quickly subsides once you catch the fruity esters from the Bavarian Hefenweizen yeast. Some detect plum, banana, perhaps cloves, others pick up hints of bubblegum. It is a complex beer, loved by many.

We took a unique approach in creating our house session beer, using a kettle sour technique to mimic the tartness of a lemon without using any actual citrus. Uncommon Crow

Inspired by the common American crow and its love for feasting on blackberries, Uncommon Crow is deep and dark in color like its namesake. Aromas of dark chocolate and cherries bloom into big blackberry flavors and a slightly tart finish. We brew this beer with 2-row barley, Midnight wheat, raw wheat, and rye malt, and then add a blend of Perle, Glacier, and Simcoe hops. The beer is fermented exclusively with our house strain of local Brettanomyces yeast. It spends 6 months in a stainless tank before we add 1,000 pounds of blackberries. Over the course of the following five months, Uncommon Crow continues to ferment and develops its luscious and uncommon flavors.
