Defying Gravity represents an ongoing exploration and expansion of the universe of sour beer. Propelled by three distinct fermentations, these unblended ales defy gravity, and will transport your consciousness to a new reality. Cape Canaveral, our maiden excursion in the series, is a strong sour ale boasting an enviable cargo of papaya, with esters of grapefruit and pineapple from our tamed microflora.

Celebrating a free-spirited and scandalous time when “Soiled Doves” bathed on the banks of the Arkansas and Chisolm trail cattlemen raised a ruckus in Wichita’s Delano district, Dove Runner is made with over 50% red wheat and enough roasted barley to make the color. This beer proves that all dark beer isn’t heavy. It starts with a slight roasted flavor that quickly subsides once you catch the fruity esters from the Bavarian Hefenweizen yeast. Some detect plum, banana, perhaps cloves, others pick up hints of bubblegum. It is a complex beer, loved by many.

Our farmhouse ale, following tradition, is uniquely crafted with a host of spices and hops to create a dry, quaffable offering, laced with background of orange and lime citrus-like flavors and mild peppery aromas.

IPA dry hopped with Amarillo, Galaxy, Mosaic, and Citra.

Brown Ale aged in Oak Barrels with wild yeast.

A refreshing wheat beer that favors hoppy notes over yeast character.

German Gose brewed with sea salt, lemon peel, and assorted peppercorns.

Dark red color, hazy, high carbonation, light dry body. Refreshing sour notes that finish with a light salinity due to the pink Himalayan salt.

Freshly harvested Elberta peaches from Detering Orchard were added to this mixed culture American wild ale. Juicy peach aromas and flavors wash over this tart and light, golden ale. Hints of vanilla and cinnamon from the oak aging give suggestions of warm peach cobbler. Shake Your Tree ends with a sparkling dry finish.

Silver City ale is our kettle soured session ale. Low in alcohol and big in flavor. We took a unique approach in creating our house session beer, using a kettle sour technique to mimic the tartness of a lemon without using any actual citrus. Instead, the dry hop addition of Centennial hops contributes the floral, lemony sensation. This process gives a beautiful, bright, tart and sour flavor on the front while keeping a soft, pillowy and refreshing wheat flavor on the finish.

Bertha von Suttner, the first female to win a Nobel Peace Prize, took bold steps with a calm spirit. That’s exactly what The Baroness achieves by aging our traditional Bertha Oatmeal Stout in bourbon barrels – a smooth and spicy brew for every lord and lady.

Collaboration with Cigar City Brewing (Tampa, FL) - Jeff and his team have known the boys at Cigar City for a couple of years, and have been itching to work with them on a collaboration. The name derives from a poem written by Edna St. Vincent Millay, which has dark undertones in its context that fit perfectly with the almost pitch black color of this beer. “The Wise and the Lovely” is a strong stout brewed with lactose and cocoa nibs from Brazil

IPA grain bill fermented with our house saison yeast, then dry-hopped with Citra. Mild funk, citrus, and just a touch of bitterness.

Pears and salt may seem bewildering, but to the mischievous minds at work in the D9 labs it was sweet kismet. Pearadox commingles a literal ton of Bosch Pears with Himalayan Rock Salt. The result is a lively, refreshing brew that leaves the drinker reveling in the bewilderment.

Breath in the aroma of the first beer in our new Pink Floyd series. You'll pick up rich complexity of fruity esters, bready malt and a hint of sweet alcohol. We added tart cherries during fermentation to represent the somewhat sour themes in the album. As the album fades out at it’s end in the same way it begins, this beer finishes dry, leaving you wanting another sip and start again. "There is no dark side of the moon really.
