Our “Brewer’s Cut Series” is a chance for our brewers to spread their wings and showcase their creativity by making a special beer. ManDevil was the brain-child of Doug Camfield and inspired by the love for his wife and his affinity for German style Maibock’s. The name derived from his wife’s maiden last name Manteufel, which is German for ManDevil. A Maibock style was Doug's first actual home brew. ManDevil Maibock is golden in color. Capture the smell and taste of crisp, clean bitterness from German Spalt hops. The malt character gives it a bready rounded out finish. Brewed for love…Brewed for beer!

What do you do when you spend half a decade working for a digital video compression company in the IPA sodden city of San Diego, you leave America's Finest City to open a brewery in the nucleus of the tech industry, and you have a penchant for manipulating data? You brew Middle Out Westcoast IPA, a hyper-dry India Pale Ale with a laser beam of hop aromas and a desolate landscape of malt character. Upon launch this IPA scores big with immense hop-derived notes of juicy papaya, sun-ripened pears, and lemon blossom; perfectly showcasing the complimentary shaft angle that Simcoe and Lemon Drop hops share as they stand tip to tip waiting for the beer to finish. More bitter than a predatory flautist and with sweetness that is harder to find than the floating island community of Arallon, we like to think of Middle Out as the Westcoast IPA version 2.0.

Deep chocolate color with a with a light tan head. Look for a lot of chocolate in this beer, followed with some dried dates, and raisins. It has a little bit of a roasty finish that balances with some lingering malty sweetness

DDH Oat DIPA w/ Simcoe & Azacca

A light colored ale made to mimic the delicious characteristics of a German Pilsner. Brewed with all German grown barley and hops, this tasty brew is light bodied, with flavors reminiscent of freshly baked bread and magnolia flowers. Highly quaffable and sooooo easy drinking.

American Sour Ale aged in French Oak Fourdres with New York grown apples sourced locally from Harvest Moon Orchard in North Salem. Bright and acidic, with notes of apple and funk. Enjoy now or lay it down for years to come.

A malt forward beer with a perfect balance of bitterness and a deep red color.

A classic Gose with hibiscus petals, coriander seeds, and lime salt. Tart and refreshing. Best served around 50 degrees.

A barleywine style ale brewed with local maple syrup and aged in bourbon barrels and on oak.

Our seasonal Belgian Dubbel is smooth and complex with aroma and flavors of White Grapes, Vanilla and Clove. This beer is typically served on NITRO to add a creamy body that must be experienced to fully understand.

Our Berliner Weisse Sour is kettle soured using a unique strain of Lacobacillus to create a tart German Wheat Beer with notes of Lemon, Apricot, and Peaches. Ask your server to add a splash one of our large selection of fruit or herbal syrups to give it a little something extra.

Named more for it’s alliterative quality than for its thematic relevance, Starry Vere is both a nod to Melville and a riff on one of our favorite rustic beer styles: the Belgian Witbier. Crisp and slightly tart, this ale shows what beauty can be found in simple, uncomplicated quality.

This German-style Berliner Weisse is gently tart, delightfully refreshing, and certainly a unique addition to our Tap Room. Brewed with traditional grains (Pilsen and white wheat) and kettle soured before being fermented with a clean ale yeast strain.
