Brewer Tom Mondor would like to introduce you to Summit Unchained 25: Vienna-Style Lager, his second addition to the Unchained series. A style that has gone mostly extinct in its area of origin, Unchained 25 features notes of toast, biscuit, and caramel from Barke Vienna and CaraFoam malt, plus balanced bitterness from spicy and herbal Hallertau Mittlefruh and German Perle hops. Inspired by a past trip to Germany, Mondor relied on authentic German ingredients and traditional brewing methods to create a Vienna-Style Lager that is truly representative of those first brewed in Europe during the early 1800s.

This special label cider was developed specifically for Woodberry Kitchen in Baltimore, MD as the perfect complement to their savory, locally sourced menus. A blend of apples and aronia berry juice, this cider has a terrific berry aroma, tart apple and berry flavor with a touch of acidity, and our signature dry finish. A mineral quality is leant to the cider from the aronia berries, grown right here at our orchard. Bubbles toss the bright flavor across the palate with each drink.

Hazy American IPA with Nelson, Galaxy and Mosaic.

This easy-drinking, sessionable IPA was born from a monster hop: Denali. Often referred to as Nugzilla, this hop varietal is bursting with tropical fruit aroma and slight flavors of resin and pine.

Doom may be impending but that doesn’t mean you have to fear it. A collision of worlds, the intense hop character of our imperial IPA mingles with the warm vanilla and oak notes imparted from time spent in our favorite bourbon barrels. Like all good things, Doom comes to those who wait.

Hoptimization spawned the research series, which investigates how changes in process, ingredients and fermentation change the resulting beer (that’s what the partial differential equation symbol for the Research Series means). Hoptimization is a DIPA series that investigates how changing different aspects of hops changes the DIPAs, which will allow us to optimize our hops and hopping procedure (set that pde = 0). Hoptimization 2 is a 8.5% DIPA that investigates the interplay between our ale strain and an intensive Mosaic and Citra forward hop bill woven four times into its creative process. It pours a very murky tangerine color, releasing notes of orange juice (with pulp) and earthy grass. The taste is highly resinous, dank-citrus, pine juice, with a chewy mouth feel and a firm and pointed bitterness.

Golden hued lager made with all local ingredients. Genie malt kilned Munich style by Root Shoot Malting and skillfully smoked by our friends at Moe’s Original Bar-B-Que, Crystal Hops grown by Colorado Hop Company, and German lager yeast propagated by Inland Island Yeast Laboratories.
