Them Little Apples

A hard Cider, made with the finest New Hampshire apples that were available to us, which we had fresh pressed into apple cider. This fresh cider was delivered the day it was pressed to our Meadery, where we blended it with just a touch of honey, and some natural sugar and let it ferment, then we let it age in freshly emptied rye whiskey barrels, for a minimum of 3 months.

Barrett

This beer began its life as a batch of Rosalind from our fall core of beers. We made a little too much back in 2013 and so we put it into fresh wine barrels that we had just received from Raffaldini Winery because wine-barrel aged saisons are delicious. After about a year in barrel, I was liking it, but it felt like it really needed something extra. Enter the spices. I'll admit, it seems like a really odd blend of spices. Some of them were things we had sitting around, and some were additional ideas to supplement that blend. My original concept was to release this in time for the holidays, but as the spices developed in the beer over the next year it didn't feel quite appropriate at that time, so it came out in Spring. I's incredibly complex, but it is without a doubt a sipper. Here, in Brewer's Notes, I will also come clean as to three embarrassing pieces of this label that make this Literary Greats release somewhat of a collector's item. I am a pedantic nerd about spelling and literature. So, not only does it pain me to note that this is actually Barrel Series #5 (and not #4 as the label says), but that I spelled both "cinnamon" AND the name of the actual beer, "Barrett", wrong. Just a reminder: Proofread, kids. It's important.

Coffee by the Hearthside

A roasty, dark, silky mix of grain and hops and then just when you thought it couldn't get any better - a bunch of cold pressed, free-trade Peruvian French Roast coffee from our friends at City Market Co-op put into the brite right before bottling! Coffee by the Hearthside Oatmeal Stout, 5.1% ABV, is a take on our Hearthside Oatmeal Stout; bringing in the addition of coffee and chocolate notes. We used 10lbs of Equal Exchange dark roast coffee from City Market Coop in Burlington, VT and cold pressed it myself, then it goes right into the brite tank for kegging.

Vos the Deferens

INGREDIENTS Hops: Magnum, Kazbek Malts: Vienna, Munich, Carapils, Melanoidin, Roast, & Smoke. Holy fuck, that’s weird! Shit!!” – Pete Fingerson Pete isn’t wrong, but also he is right. This style of beer comes from the land of the ice and snow, from the midnight sun, where the hotsprings flow. The Kviek (a strain of S. cerevisiae) sailed in ships to Yeast Bay. New to our shores, this traditional Norwegian yeast imparts most of the weirdnesses of spice and orange. We armed these hardy, voracious, immigrant fungi with flaming beech wood, ample juniper, and the earthy spices of Kazbek as they ran over the yielding background of Vienna and Munich. This conquest is now coming to your mouth. Amassing their forces in the land of the Epididymedes, converging near the Pross State, conducted by mighty Vos the Defrens, and ready for Valhalla, these hordes are coming.
