100 Barrel Series #30 - Island Creek Oyster Stout

This one-of-a-kind, limited-batch creation has a rich body and a smooth feel derived from a combination of roasted barley and chocolate rye malts. The roasted notes of the stout blend beautifully with the briny, mineral flavors of Island Creek Oysters, which were added to the brew moments after being harvested in Duxbury Bay. An addition of hops adds a hint of bitterness and aroma to balance the sweetness from the malt combination. This beer is best enjoyed in a pint glass with a plate full of Island Creek Oysters.

110K+ OT Batch #2 is an Imperial Stout dry hopped with Mt. Rainier hops and aged on toasted Spanish Cedar. I.R.I.S. stands for India Russian Imperial Stout and while this brew is still all stout right down to its hefty body, it is hopped a great deal more than our standard stout offerings. The extra punch of kettle hops balances the rich chocolate and malt notes and the Mt. Rainier dry hopping adds slight licorice notes while the cedar contributes to a moderately spicy, burnt and bitter finish. 11.4% ABV. Sloth is the avoidance of physical or spiritual work. SLOTH Belgian-style Imperial Stout is deliberately dark as hell. The pour is slow and sluggish. The Alpha Series focuses on the use of hops in mead making. Only 16 gallons of this first batch were made. Over 7oz of hops, including Citra, Warrior, and Amarillo, were used to make a ’hop tea’. The ’hop tea’ was blended with orange blossom honey to make a strong, sweet mead. The finished product has a beautiful citrus-floral aroma and the mildly bitter hop flavor compliments the sweetness. This is an American IPA fermented with our house strain of Belgian yeast. The beer has a soft copper body, malty and balanced with 70 IBU from our Columbus bittering hop addition. The hops then transition into flavoring hop additions during the last 30 minutes of brewing. At the end of the brew we add buckets full of aroma hops and ferment at a warm temperature. Then to capture even more hop flavors and aromas we poured more buckets full of hops directly into the beer (dry hop) and allow the beer to rest and absorb all the delicious hop goodness.

Angel's Share Brandy

Currently draft only. Recent bottlings have an orange front label. Down in Kentucky and across the pond in Scotland, distillers who age their whiskeys for many years refer to the evaporation of the spirits from their barrels as “The Angel’s Share.” We couldn’t agree more. Our Angel’s Share is a barrel aged burgundy colored ale infused with copious amounts of dark caramel malt to emphasize the vanilla and oak flavors found in freshly emptied brandy barrels. Each batch spends no less than 6 months aging in the oak. The beer is available in 750 ml bottles and on draft at inspired locations. 2010 ABV: 11.5% 375ml Bottling stamp on neck says 2010 but was released in Jan 2011.
